If you had/are having a vegetarian dinner what is it?

I've been cooking veggy food a lot lately. We all love it, it's cheaper and it's healthier (usually). Still eating lean meat, chicken and fish but not as much.

Tonight I made lentil loaf, veg sauce (peppers toms etc...) and sweet potato wedges all done in the oven. Apart from first bit where I have to cook lentils and onions on the stove.

So what did you have for your vegetarian dinner? Or what do you have when you eat veggy food?

Dp made minestrone soup yesterday (Delia recipe) It was gorgeous. Even a very fussy friend loved it Smile

Yesterday we had Nigella's minestrone. It was sooooooooooooooooo lush.

Tonight we are having jacket potatoes with the innards scooped out and mashed with philadelphia cheese, topped with strong cheddar and a tiny bit of red onion and put back in the oven til cheddar is bubbling, with green salad and beetroot.

We are not vegetarian but eat veggie at least 3 x a week.

Rice with chickpea, halloumi, mushroom and spinach curry. I have variations of this a lot.

Fennel that sounds lush! I love halloumi. How do you make it?

Tonight - macaroni cheese, chips, green beans. A standard midweek meal that both children love, tonight was quite dull and basic but often put in spinach, top with breadcrumbs/parmesan

Fave dishes are:

Dhal, bombay potatoes and rice, served with chapati (easy to make) (Delia's recipe is good, with a bit of adjustments) (kids love it too but don't make it so hot for them).

Pad Thai made with tofu (just heaven in a big bowl) served with mini spring rolls.

Veggie lasagne made with either home-made tomato/red pepper sauce and roasted veggies, layered with sauce/spinach/bechamel sauce, topped with bechamel/cheese sauce and one added egg mixed in, served with simple salad/garlic bread (or if i get my way, chips!)

Simple pasta with home made tomato/red pepper sauce, perhaps some pesto stirred in, topped with oodles of cheese. I could eat a huge plate of that every day, and have eaten it often since I could first cook it at around 13-14, it held me through uni and I love it now if it is up to me to cook!

My DP is cooking himself a vegetarian haggis for dinner. And chips.

I don't fancy it.

We're not vegetarian but we do cook vege stuff often. We're big fans of Quorn products - their chicken pieces are great in fajitas and their mince is great in bolognese or chili.

We had red lentil and vegetable soup with cheesy bread rolls (Annabel Karmel recipe). It's our favourite meal.

I love the look of the root veg curry.

Lotterywinners, I saw a recipe for that, had kidney beans in it. Sounds lovely but think I'd have to go traditional with tatties and neeps? Smile

Fry onion and garlic with spices - chilli, ginger, cumin, coriander etc. add mushroom, halloumi chunks, chickpeas and other veg if you like. Fry a bit more. Add some variation of passata or tinned tomatoes or lemon juice. stir a bit. Add the spinach (or kale or cabbage). stir a bit. Add yoghourt if you like. Serve with rice.

Very easy.

Had bolognese pasta bake made with quorn mince, which I love & my DH can't tell whether it's meat or not once it's in a sauce!

Yes Curiousmama - he is just being lazy. We're both ill so freezer raiding! Normally would do tatties and neeps! I am having plain boiled rice for dinner as all I can face. :( So I guess my dinner is vege too acutally! Grin

Have had my eye on that root vege casserole for a while, so it's good to hear a rec from a real person! Think it could be something that dp would enjoy cooking.

leek and sweet potato soup for us. Has the advantage that i can use leftover soup for me and the baby tomorrow.

Looks like we're going to Ikea tonight and eating in the cafe? I was looking forward to cooking more veggy food but will do it tomorrow instead.

We're going to Ikea for a bed and bookcase not just the cafe Wink

Last night we had curried chcikpeas with parnsip fritters (Good food, jan or Feb 2011) which TBH promised more than they delivered.

Oh won't try them then. Have you seen the moroccan chickpea soup on first page? (I think) You can add chicken if you're not veggy. I sent for the spices that go in it but they aren't expensive, was 1.99 for 100g with free postage.

Meatless dishes that we have quite often are:

Cauliflower cheese
Mac & cheese
Chickpea/cauliflower curry
Pasta primavera (lots of veg e.g. mange tout, carrots, beans, courgettes etc. with a slosh of cream and parmesan cheese)
Penne with fennel (oddly lovely dish with slices of fennel, chilli and garlic, dash of cream and parmesan cheese)
Mushroom risotto
Veg lasagne
Mixed bean & veg fajitas

I'm veggie too! Last night I did a stir fry with purple sprouting broccoli, pak choi, red onion, green beans, ginger, garlic, quorn bits, soy sauce, maggi sauce and noodles. NOM!

Tonight I think I'm going to do a veggie goulash with carrots, swede, parnsip, onion, paprika etc and mashed potato. YUM!

Tonight I will be making Rose Elliott's Red Lentil Pasta which is basically pasta shells topped with a tomato sauce with red lentils cooked in it. Topped with grated cheddar cos red lentils and cheddar a partners in heaven.

Tomorrow I think I will do grilled spiced paneer cubes.

I have the Jamies 30 minute thingey though not much is veggie, some of it looks a bit daunting but the series was good so may adapt some of the recipes.

Yum to paneer.

I like to stick it in curries, or to fry it with onions, peppers and spices and roll it up in a chapatti with mango chutney and salad.
