If you had/are having a vegetarian dinner what is it?

I've been cooking veggy food a lot lately. We all love it, it's cheaper and it's healthier (usually). Still eating lean meat, chicken and fish but not as much.

Tonight I made lentil loaf, veg sauce (peppers toms etc...) and sweet potato wedges all done in the oven. Apart from first bit where I have to cook lentils and onions on the stove.

So what did you have for your vegetarian dinner? Or what do you have when you eat veggy food?

Dp made minestrone soup yesterday (Delia recipe) It was gorgeous. Even a very fussy friend loved it Smile

Had mushroom stirfry with fresh egg noodles and hoisin and garlic sauce. Yum.

Lunches are usually homemade soup - I love sweet potato, carrot and coconut soup, made with lots of veg stock and a little chilli.

I've just had veggie chilli (this one.

It was yummy and I have a mountain of it left for freezing.

I did, but only because there were no tins of tuna left in the cupboard!!

I cooked brown pasta in the same saucepan as frozen peas, sweetcorn, red cabbage and spinach. Drained it and added olive spread, creme fraiche and grated cheese (actually the cheese might not have been veggie, but we'll gloss over that!)

It sounds like something a student would cook, I know Blush, but DS, who is a notoriously fussy eater, polished off the lot!!

I didn't end up going to Ikea Grin so made lentil bolognese with wholewheat spaghetti. Dp sliced a ciabatta and we all polished it off with some grated cheese. First time I've done it but was delish. Thank you St Delia Smile

So healthy and cheap to do, reckon the whole lot was under a fiver?

Tonight, due to completely omitting it from the meal-planning and then requiring a meal that could be eaten in different sittings round people's comings and goings, we had carrot and lentil soup and breadmaker bread.

Last night we had mixed bean chilli. Tomorrow night we are having Nigella's Tunisian vegetable stew and couscous, although as we have guests I am going to add the lamb meatballs to that as well.

We are not vegetarian, but I don't seem to buy much meat any more.

Maybe, Curious, but he has a liking for very cheap meat - 'Value' pork luncheon meat - the sort that contains trotters and snouts. Not even nice ham!! Smile

Just made store cupboard veg balti for tomorrow night - big pan, fried up onions, peppers, carrots & mushrooms until softened, added cooked cubed new potatoes & half a jar of Patak's paste, cherry tomatoes (halved) & two packets of chopped tomatoes. Then a few lumps of frozen chopped spinach, simmered for 20 minutes, added a handful of frozen coriander.

Will serve tomorrow with rice, then freeze individual lunch box portions to have with mini naans.

I'm really going off the idea of red meat now. If I eat veggy tonight then that's 4 in a row. And am really fancying verggy, probably something with tofu? I keep saying I'll use it but haven't yet although did years ago. I remember it worked well in stir fries?

Last night I made lentil veg caserole with pesto topped with polenta. (managed to keep enough polenta for the topping as DS1 loves it and keeps nicking it!!!

Tonight I am making carrot and cahsew fan on a bed of hot puy lentil and dill salad. For a desert I am making banana and lemon souffles.

I am having rocket, mozerella, tomato and avocado salad for lunch.

Tomorrow I am doing a mixed squash and muchroom rissotto.

All really easy to make.

I've looked at that Nigel Slater korma recipe and it looks really lovely but ... quick???

Professional chefs' idea of quick and my idea of quick really don't quite match up! I get that its quick to cook but it does look quite a faff to prepare and shop for.

(am going to make it at the weekend, tho').

Mostly, we eat veggie (or actually more pescatarian), apart from having meat on Friday nights. Both DP and I were veggie for ages, and I actually prefer having less meat in my diet - you feel lighter and happier, and allegedly I have the cholesterol of a 23 y/o (though sadly, not the metabolism).

Night before last we had egg tagliatelli with a sauce made from grilled courgettes, mascarpone and wild mushroom and truffle pesto. A lot of the time we have a "big salad" with things like avocado, mushrooms, mange tout, croutons, grilled artichokes and some sort of cheese (mozarella or feta) or egg.
