If you had/are having a vegetarian dinner what is it?

I've been cooking veggy food a lot lately. We all love it, it's cheaper and it's healthier (usually). Still eating lean meat, chicken and fish but not as much.

Tonight I made lentil loaf, veg sauce (peppers toms etc...) and sweet potato wedges all done in the oven. Apart from first bit where I have to cook lentils and onions on the stove.

So what did you have for your vegetarian dinner? Or what do you have when you eat veggy food?

Dp made minestrone soup yesterday (Delia recipe) It was gorgeous. Even a very fussy friend loved it Smile

soya burgers that are in a packet and you add water too, homemade potato wedges and rocket salad-yum yum!

I used up tons of veg yesterday (which was going to go off otherwise) and made a curry with lentil, potatoes, onion, carrot, parsnip, turnip and curry spices and garlic. Was gorgeous and quite mild so all family ate it for tea. Also made huge pot of root veg soup with leek and celery and all of above veg too and dc had for lunch. This will see me through the rest of the week of lunches as I'm back at work tomorrow Sad

Not a veggie, but need to save money and lose weight.

stir-fry with cashew nuts, ginger, garlic, pepper, courgette and broccoli (slug of chilli sauce, slug of sesame oil to finish) with noodles...

we mostly eat veggie - so I basically buy whatever veg looks good and try to structure each meal around a veg - so aubergine (might be curry or moussaka), cauliflower (dhal, cauli cheese, fritters) etc. I find the main thing is to have a good stock of herbs, spices and condiments and not to mix too many veg together (otherwise it always tastes like fridge soup).

HFW's veggie pasties are lovely too (lentils are the base) - DD loves them (in his everyday book)

Tonight, veg and Quorn chilli.

Not veggie but will usually use Quorn when I can, can't bear minced meat, and prefer it to chicken.

im a veggie, and tonight was pasta with broccoli and pesto, last night made black bean fritters with mango chutney and salad, night before nigel slaters leek soup (lovely). This week am planning quorn pilaf (slimming world recipe), ratatouille with baked potatoes, roast veg with couscous, spag bol - quorn, and cauliflower cheese.
Slimming world good for low fat qUorn recipes, as they are free (no points).

I'm having a vegetable tagine with potato - red onion, red peppers, carrots, tomatoes, dried apricots, parsnips and spices (cinammon, cumin, chilli and paprika). Yum!

Ooh I like this thread - lots of good ideas already!

Yesterday we had mushrooms cooked in garlic and cream and wine, with toast and salad.

Today we had spiced roasted potatoes, little pasties and green vege.

Tomorrow we're having oven baked leek and pea risotto.

On Thursday we're having some sort of vegetable stew to use up all of the vege.

On Friday - no idea yet!

Mushrooms baked in oven with goats cheese and caramelised red onions on top. Served with falafel, cous cous and mango chutney. And a "salad" the last 2 edible tomatoes

Last night we had a veggie barley, tomato and garlic risotto (very garlicky as the recipe included 2 heads of garlic!!) with feta cheese crumbled on it.

Tonight I had a stuffed courgette, stuffed with the remains of the above meal and a bit of chilli added for heat. Served with some rice and peas that the others had with their non-veggie meal.

I made a vegetable korma last night, doing a batch cooking session and we had a portion tonight.

Also had a chicken and vegetable bhuna for people who wanted it.

We had leftover cashew nut roast with mash, yorkshire puddings and gravy. Tomorrow night we'll have home made pizza. I like to put onions, capers and sultanas on my tomato and mozarella, and pretend it's a pizza express Veneziana. Dh won't let me put those on his so he gets jalapeno chillies, and extra cheese and dd (19 months) likes hers with sweetcorn on top. Easy to accomodate everybody!
