If you had/are having a vegetarian dinner what is it?

I've been cooking veggy food a lot lately. We all love it, it's cheaper and it's healthier (usually). Still eating lean meat, chicken and fish but not as much.

Tonight I made lentil loaf, veg sauce (peppers toms etc...) and sweet potato wedges all done in the oven. Apart from first bit where I have to cook lentils and onions on the stove.

So what did you have for your vegetarian dinner? Or what do you have when you eat veggy food?

Dp made minestrone soup yesterday (Delia recipe) It was gorgeous. Even a very fussy friend loved it Smile

Oh talking about cheese on toast (as you were Barbaian) I had the most fantastic Welsh rarebit on crumpets yesterday, A posh cheese on toast and twice as expensive when you have it a pub lunch but it was lovely. That's going to be something for Saturday or Sunday lunch times I think!

It's easy peasy Curiousmama and takes about 20-25 minutes. I don't stand over it/fuss about as much as the TV chefs do & it's still yummy:

Peel & chop butternut squash - roast in a little olive oil in over with some garlic while risotto cooks (hot oven)

soften finely chopped celery & onion in olive oil (fennel is nice too - I use loads of veggies to boost veggie ratio). Add risotto rice & stir 'dry' for 3 minutes or so.

Add some hot stock (Mariogold boullion is good if veggie) - stir a bit until it's absorbed then add some more. I tend to add 3 lots & stir & then add the last lot of stock in one big hit then tidy up kitchen and stir occasionally. When rice is nearly al dente add roasted butternut squash & garlic (de skin if necessary), lots of freshly grated black pepper and a knob of butter (optional), and some grated tasty cheese or parmesan (again this can be optional if watching calories/fat content - if I was leaving out butter & cheese I might add some lemon juice & large amount of finely chopped parsley)

yes agree about the Korma I thought it looked complicated. Am surprised as usually Nigel is all for saving time? I fancy trying it sometime though as everyone will eat it.

Doesn't veggie food sound so exciting?

Got choc chip brioche bread and butter pud ready we're having it for supper as ds1's at air cadets so will cook it when he's due home.

Tonight it is veggie fajitas - can't wait for dd and dh to get home - sooooo hungry!

Bit of a cheat for tomorrow - made a huge pan of 'bolognese' with carrots, peppers, onions, mushrooms - softened in big pan in olive oil, then added a packet of Beanfeast, two jars of pasta sauce, two tins of tomatoes & simmered for half an hour.

Will use for lasagne tomorrow.

My new year's resolution is to rely less on Quorn & Beanfeast! Dh & the kids love both - I'm trying to use more pulses instead.

Pretty much this recipe (am too lazy to type it myself but I googled it and this was the first result, it literally is as simple as this) but I also use a couple of eggs and some nutmeg, I don't bother with thyme. I also add a bit of onion. And I must admit I would normally add bacon but I found I didn't have any, hence my return to this thread! Blush

At Christmas [for dd and dd-i-l] I made a nut roast from Mrs Beeton's Christmas Book-I modified it with mushroom sauce and everyone said it was delicious.

We had here a cheese omlette, diced sauteed potatoes, steamed spinach and salad. Very easy and quick :)

LWOA did you use proscuitto on the tart? Looks delicious and easy, always a good combination Wink

Not sure what we're having tonight? I do fancy a curry though and dss will be at their dad's so can go spicy!

The tart looks lovely, thanks. I take it that proscuitto is bacon and therefore no good for me as a veggie?

Chilli beans in the slow cooker using tana ram say recipe, served with sour cream , lime dressed tomato avocado salad and grated cheese.

left overs will live again as super tv snack nachos.

Have concocted a curry based on the peanut squash that arrived in my veg box today. Roasted squash, tinned toms and curry paste from a jar. Hope it's okay. Confused Shall we take bets on how many DC (out of 3) will eat it?

DD has a bit of a cold and didn't eat very much at all. DS1 ate all his. DS2 mashed his on the plate, but didn't eat it. 1 out of 3 - hardly universal acclaim!

DH enjoyed it though. Smile

Lovely ideas, we had DP's amazing Mushroom Risotto, as DGC here and they demand it when they stay over. ( I am feeling poorly so only had I small bowl) there was still none left as usual, DGS1 is 13, say no more!
We are having brown lentil shepherds pie with cabbage and mashed swede and carrot tomorrow as I need comfort food.
Last night we had Quorn fillet in crumbs with veg and parsley sauce, night before Fridge Pasta Sauce with Garlic Ciabatta, delicious
Night before, Root veggie stew, lots of onions, garlic and leeks, my
Fave if I've got a cold or sinusitis.
New Years Eve, I made a tart from Christmas Veggie magazine, it was really lovely, I'll find the recipe and post it later.
I am loving this thread as it's so positive Smile
