If you had/are having a vegetarian dinner what is it?

I've been cooking veggy food a lot lately. We all love it, it's cheaper and it's healthier (usually). Still eating lean meat, chicken and fish but not as much.

Tonight I made lentil loaf, veg sauce (peppers toms etc...) and sweet potato wedges all done in the oven. Apart from first bit where I have to cook lentils and onions on the stove.

So what did you have for your vegetarian dinner? Or what do you have when you eat veggy food?

Dp made minestrone soup yesterday (Delia recipe) It was gorgeous. Even a very fussy friend loved it Smile

Nice to hear your grandchildren like veggy food Earthymama Smile My dss love it but tbh they love their veg anyway, always have. Only thing is they're not keen on mushrooms whereas dp and I love them.

Tonight both dds are out at parties, so dp and I making the most of this and having things they don't like for dinner!

I am having a haloumi and spinach salad and new potatoes; dp is a carnivore and will have potatoes and salad with a pie he got at the farmers' market this morning.

For the week we've got various things planned, including:

veggie bolognaise,
a quorn and leek pie,
wraps with spiced sweet potato, chickpeas and spinach,
paneer tikka with salad and naan bread,
soup.

BelligerentGhoul, prosciutto is smoked ham, am only masquerading as a vegetarian I'm afraid. Blush But the tart is good minus meat, leeks have such a fabulous strong flavour it really doesn't need anything else in my opinion. :)

Have just made yummy, yummy wraps thing:

I fried an onion sliced into half moons with some garlic. Added a chopped red chilli, a teaspoon of paprika, some thyme and a spot of water, then a drained tin of chickpeas and salt and pepper.

Meanwhile, I boiled a bag of ready chopped butternut squash and sweet potato until just soft, then drained it and lightly mashed it.

I folded the mashed vege into the chickpeas with a load of chopped coriander then used this mixture to stuff tortillas, which I folded and put in a roasting dish, with the fold side down. Covered in grated cheese and cooked until crispy. Had with a spinach and red pepper salad and it was bloomin' lovely! :)

Any final ideas, folks? Am going to copy and paste this thread and save it for days when I'm staring blankly into cupboards not knowing what I want!

i am veggie, i cooked
cous cous , with olives, sun dried
tomatoes,cannelini ,sp?,beans plus stock.
served with spicy crisps from a packet.
