You could do a mincemeat with apple juice, quite a few recipes have chopped apple in. It isn't necessary to have nuts or any citrus peel/candied peel either, when you make the recipe make sure you make up the same weight in the other ingredients to get the proportion right with the liquid.

You are aware that when you bake the pies, the alcohol evaporates and you are just left with the flavour of brandy or whatever you used? I have posted a Fig and Sherry mincemeat recipe further up this thread which you could alter by leaving out orange and lemon zest and orange juice, replace mixed fruit (unless you know it contains no mixed peel) with sultanas, and replace sherry with apple juice. I have just made mine, and I swap the mixed fruit for sultanas.

You can just leave it in the jars if you use the alcohol, as it will preserve it. Are you intending to make the pies and freeze them ready made, I haven't tried that yet with this mincemeat! but using the apple juice instead it would be fine. The dried fruits absorb the liquid anyway.

Good idea MrsTwinks. No-one need know it was a 1kg plastic bag of carrots on half price from Tesco. Purple carrots it is.

Oh gosh, are we not allowed plastic? I feel awful, but some of my most delicious Christmas things ARE plastic. (eg the fairy at the top of the tree, who came from WH SMith Tree Trim when I was working there about 25 years ago!)
In fact ( some of my precious Christmas things ARE plastic bags. I have a Christmas Woolworth's one I can't throw away now...(sob)

Liveinazoo, I've never been called an angel before, thank you very much! Let us know how your modified mincemeat turns out, and whether you enjoyed it. There are so many different recipes out there that swapping ingredients won't make a lot of difference to the mincemeat as a whole.
