Made the lasagna without the lasagna

What to do?

Just prepped for dinner, did all the mince with tomatoes, onion etc and made the cheese sauce, boiled some potatoes and went to get the lasagna sheets and don’t have any.
Not feeling 100% so cba going to the shops, how can I make it into a proper meal? I have some pasta I could use instead, but what about the potatoes? Save them for tomorrow 🤷🏻‍♀️

I have a child too and you can cook it with wine as the wine will be cooked off as it evaporates.

Shepherd’s pie is made with lamb mince, not beef. It has peas and onions and a brown gravy. Not a tomato dish. And no cheese sauce.

Does it taste ok? That's what is important! I'm sure it tastes fine, mince cooked in sauce, cheese, spuds- these are all comforting foods on a cold winter's evening. Have your family eaten it without complaint? Make sure they do the washing up and you get some rest since you're unwell.

All the talk of potatoes and mince here had me craving something similar so I made beef mince and onions in gravy and served with mashed potatoes, baby carrots, peas and broccoli. Very fast and simple (I used frozen veg and bisto gravy which might horrify some people here since I didn't make my own gravy!) but so tasty, I love mashed potatoes in winter, such a comfort food.

Just in case anyone doesn't know, cooking and cooling your starchy carbs like rice and potatoes develops resistant starch, so if you eat them as leftovers then next day it's very good form your gut health (obvs be careful with rice)

Shallow fry the boiled potatoes for breakfast (say with an egg and tomatoes/beans). Or fry to have as a side for tomorrow's dinner with other healthier veggies.

They will crisp up and be lovely! I agree wasting food is upsetting.

And I don't like potato salad either. Even in the summertime. It tastes of leftovers and mild regret.

Mash the potatoes and lay them on top of the mince, hen grill with or without cheese. It’s a Shepard Pie if it is minced lamb or Cottage Pie if it is beef.
