What did you have for dinner tonight?

I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

Pasta with chunky bolognese (made with cubed beef rather then mince) and Parmesan.

Ohhh beef ragu, I love that. I stick a dash of balsamic and a wee bottle of red wine in with mine along with the garlic and herbs.

We had steaks, onion rings, chips, salad, grilled tomatoes. Followed by homemade apple crumble and custard.

Butternut squash and pea risotto, with pork chipolatas on the side. And homemade scones and jam for afters. A slight fridge emptying dinner but all very delicious.

Now I want a steak! I had home made scores with jam and cream too!

Main course salmon fillet poached in fish broth with fresh chili. My favourite craze at mo. Takes five mins. Spinach with it. Some boiled potatoes would have been nice with it too.

Tomorrow it's the remains of a disaster of a pork belly slices dish. The jus made with good Apple juice , pan juices and pears was lovely but the meat omg was as tough as old boots.

Slow cooked paprika beef casserole is maturing in the fridge for later in week as need something easy and comforting following deep sédation procédure on weds.

In the end, we had sticky orange chicken with rice, which my dh made for us. I'd previously already defrosted some chicken breasts so they needed using up.

The strawberry feta thing sounds nice 😋

Roast chicken, roast potatoes and carrots, and broccoli with lots of gravy.
will use remaining chicken to make a chicken risotto.

DCs are going to have spagetti bolognese tonight with salad. The sauce is frozen in the freezer and it's going to be 'one of those days'.

I'm making another fruity salad- with strabs and feta @Mumtobabyhavoc Grin

@Forestwanderer taming twins has some good recipes. I tend to use all recipes as a starting point and then adapt to our tastes and what we have available, etc.

Not great when I don't write my changes down, though, as then I can struggle to recreate it exactly, which winds my dh up 🤣

Tonight we had crispy mince with peas and rice (beef mince caramelised with Chinese rice wine, soy, ginger, garlic, chilli, sesame and msg).

Husband made a Goan chicken curry and Basmati rice - it was lovely , grateful for him cooking as left to me it would be toast and ‘it’

We haven't eaten it yet so I don't know if it's any good but I've made the viral Trader Joes potsticker casserole (basically potstickers cooked in thai red curry and Soy Very teriyaki with spinach). I also added some leftover shredded pork. Topped with chili crunch and spring onions. Hopefully it tastes as good as it looks on TikTok or I'll be filling up on yogurt and fruit!

Yep Chilli here too, rice but no tortillas or guacamole sadly! Grated cheese and crème fraîche. Delicious 😋

Sounds good. Hadn't heard of it before so just looked it up...had no idea potstickers meant dumplings, lol. Looks nice, though, and we like Asian food, so may give it a try.

Last night we had kokkinsto, a Greek stew made with red wine and Briam , sliced vegetables baked in a shallow dish. It was really lovely. Tonight we had sausages with the remaining briam.

Savoury pork mince absolutely packed with every vegetable I had in the fridge, plus some frozen veg, plus some dried soup mix (pearl barley, split peas, lentils etc.) Te only types of veg I dont put in are anything cabbagy) All chopped up small so it's difficult to tell what's mince and what's veg! I make it frequently as it's a way to get my vegetable-averse DH to eat them, and he loves it.

Served with boiled potatoes and broccoli. Didn't need the broccoli but it needed to be used up.

@CharlotteCChapel Greek cuisine is another favourite of ours. I've made Briam before, which we enjoyed, but I haven't heard of kokkinisto, so that's one to look up, thanks.
