I'll go first. I'm hoping to get some nice ideas 🙂that I wouldn't think of myself as my brain is tired of working out what were all going to eat every day 🙄

Today we had (per person):

1 large protein wrap with sliced, seasoned fillet steak, cooked rare (150g), 200g sliced and fried mushrooms and 80g fried onions and 40g grated red Leicester and cheddar cheese with garlic mayo.

It was delicious and very filling 😋

Also what's the oddest thing you've made with leftovers?

Last week, to save it from going to waste, I ended up eating diced cooked carrots and boiled potatoes mixed together with some salad cream and diced, pickled gherkins. Sounds weird but tasted okay 😂

Cauliflower Cheese Taffy. My mum called it that.
Cauliflower florets in a runny cheese sauce with scallions & crispy bacon shredded on top. Served with thick slices of crusty bread to mop it up.

Phili cheese steak wraps (kit from aldi) but added cooked mushrooms and onions along with the pepper and used the last of the spinach leaves in the wraps too.

That's similar to what I made on my 1st post....it's a really quick, but tasty meal, so it's a regular meal here 😋 great minds and all 😂

I made a recipe from one of those Waitrose recipe cards: venison meatballs with roasted carrots, shallots, red chicory and blood oranges, in a soy, honey and mustard sauce. Sounds a bit weird and was very different from my normal recipes which have lots of spices or herbs in them, but it was lovely. DH said he;d have it again.

I made stir fried rice cakes with pork and veg as we had it at a restaurant a few weeks ago and I've been craving it ever since. It was DELICIOUS!

Did the Curried Beef Goulash recipe

From Annabel Karmels 'Busy Mums Cookbook.

Happy to add the actual recipe if anyone likes.

I added the following as extras....

Added an extra tin of tomatoes, 2 heaped tbsp of tomato puree, 2 tbsp of Belazu brand Rose Harissa paste to it and 2 extra tbsp of mild curry paste.
Delish.
Myself and my two teenage boys ate it.

Tonight it will be salmon fillets dusted with flour and sweet paprika, pan fried in butter served with a fruity Greek salad. Basically Greek salad as a base but with additional sliced grapes, cashew nuts avocado and blueberries and dried cranberries. I love adding fruit to salads as I don't like fruit on its own very much.

I made something like your salad, too!
cucumber, tomato, bell pepper, feta as the base salad with any of the following:
mandarin orange, grapes or figs
a good handful of spinach or kale if I have it;
croutons, or toasted sourdough chopped up into bite size pieces and drizzled with evoo and a sprinkle of salt;
chicken, salmon or prawns;
avocado;
hard boiled egg;
red onion.
The dressing is usually just evoo and a squeeze of lemon or vinegar if I don't have a lemon.

I wonder if it is a N Am thing? I'm in Canada. When I was a kid everyone put butter on their rice! (I think it was even in the picture on the box of the Delta rice brand...)🤔 I mix butter into my kids' rice (white/brown/wild) when I cook it for them.
I've been adding grapes to salad for ages, but don't think I saw that anywhere. I think I randomly did it.
Strawberry spinach salad is pretty common (done forever) here: sliced strawberries, spinach, crumbled feta, vinaigrette. Do you do that?
I add grapes to chicken salad for sandwiches: chopped chicken, sliced grapes, mayo
(I've also met someone who adds a touch of curry powder to same)

We must have an "add fruit" gene here ... we did come up with pineapple pizza! 😂

My American born husband used to butter digestive biscuits and when he discovered Weetabix, he had them for breakfast, dry but spread with butter and jam.

I also love grapes in salads and in a white wine cream sauce with chicken. Delicious.

It was new to me too! I never understood the appeal. Here’s the recipe, I hope you like it, it’s easy to halve or double.

4 chicken breasts
40g butter
3 shallots finely chopped or an onion if that’s what you have
2 tsp tarragon, fresh or dried
400 ml dry white wine about 1/2 bottle
200g white seedless grapes, halved
4 tablespoon single cream
salt and fresh black pepper

To thicken the sauce, mix together
2 teaspoon butter
2teaspoon flour

How to
Melt butter in pan and brown chicken breasts for 5 minutes or so
Take out and put on a plate
Add the shallots/onion to the pan and cook for about 5 minutes or until soft
Put the chicken back in and sprinkle with tarragon
Pour in the wine, cover the pan with a tight lid, and simmer very gently for 30 minutes or until the chicken is tender
Take the lid off and turn the heat up
Let the sauce bubble and reduce slightly for about 5 minutes then whisk in the butter and flour paste till the sauce has thickened a bit
Turn the heat down and add the halved grapes and stir in the cream.
Let them heat through, then check the seasoning, and serve the chicken with the sauce poured over with creamy mash and green vegetables. French beans are good.
