What did you eat today?
I love reading what people have (and getting new ideas/recipes).
My new year new habit is to have a side of veg with each meal (and eat it first).

Breakfast - Sourdough toast with soft cheese & bagel seasoning, side of cucumber/tomatoes,

Snack - Crisps

Lunch - Stovies with beetroot (traditional in my part of Scotland)

Snack - Christmas choc (trying to get through this)

Teatime snack - Bowl of homemade lentil & veg soup, a couple of crackers

Dinner - I am going to a pub quiz so will have a wee something to eat from their bar bites menu!

Serves 6 generously

Ingredients
1 large butternut squash chopped into chunks (I leave peel on and remove when cooked)
1 red pepper halved and deseeded
5 large tomatoes halved
1 large onion halved
2 carrots cut into chunks (not necessary if you haven’t got them)
1 tbsp olive oil
Thai 7 spice powder (if you can get it - doesn’t matter if not)
3tbsp Thai curry paste (red or green - use less if you don’t like things too spicy)
600ml (ish) Chicken Stock
2 large chicken breasts (or leftover cooked chicken)
1 can coconut milk (FF or light)

  1. Put all veg in a large roasting tin and toss with olive oil and Thai spice & seasoning.
  2. Put in oven at 180 for 40 mins or so until soft and slightly charred.
  3. tip into blender with 200ml of chicken stock and whizz until smooth
  4. Add Thai curry paste to a large saucepan with a splash of chicken stock and cook until fragrant.
  5. Tip in whizzed vegetables and the rest of the chicken stock (my measurements are approx so maybe put some in and see how thick it is/you like it)
  6. If using raw chicken add it to the soup now and poach gently until cooked (15/20 mins) then remove and shred or chuck in your cooked chicken and warm through.
  7. Stir in can of coconut milk and heat through.

I make a huge batch and then freeze in portions. It defrosts from frozen in microwave perfectly.

L lentil vegetable soup, small vegan ham and cheese sourdough sandwich, mini mint chocolate reindeer

D gnocchi in a tomato sauce with loads of vegetables and some tofu

S breadsticks, decaf tea and coffee with almond milk

Debating whether or not to eat a doughnut now

Breakfast - kefir yoghurt, chia seeds, blueberries and strawberries

Lunch - took DDs to McDonald's as a last day of holidays treat. I had a fillet of fish with a side of chicken nuggets and a coffee

Dinner - cottage cheese on a baked potato with a rocket and onion side salad

Snack - an apple and handful of walnuts

I had:

B: protein yoghurt with chia, pumpkin and linseeds.
Coffee.

L: Leftover jumble from the fridge 😂 ended up being the last of the Christmas turkey (had been frozen dw) with red cabbage, baked beans and broccoli cheese.

D: Will be vegetable soup.

A very nice dark chocolate digestive biscuit.

No idea what we are doing for tea yet. Will wait for OH to get home and then we can cook something when we’ve decided.

B - barley porridge with stewed apple, cinnamon, chia and flax seeds and a few chopped walnuts

S - sour cream rice bites (leftover Hogmanay snacks)

L - Lentil soup, 3 crackers with soft cheese & bagel seasoning, a small chopped side salad (trying to start lunch/dinner with a veg starter as per Glucose Goddess)

S - Dark choc

D - will be chorizo, chickpea & spinach stew with wild rice/grains. Maybe a bit of Christmas cake with a cuppy after.

S - carrot, celery & cucumber sticks with red pepper hummus
L - bagel with smashed avocado, a little bit of feta & cherry tomatoes. Soya fruit yogurt & a christmas chocolate.

D : just making vegetable packed bulgar wheat with a Cajun seasoned chicken breast griddled. Fruit for pud

Muesli mix with puffed quinoa, freeze-dried blueberries, pumpkin seeds, chia, banana, kefir.
Baguette with kalamata olives baked into it, chunks on the way home, bit more at home with butter.
Pizza made with bought base, with onions, mushrooms, buffalo mozzarella and chilli flakes.
Later will have mushroom/blue cheese vol-au-vents and focaccia made by DH and salad as PIL are round and it's a special day where we live.

B - wheatabix with dried apricots and blueberries and a decaff coffee.

Snack - Avocado on toast and a bag of crisps

L - a few chips in a roll and a banana.

Cup of milky cacao (sp?)

D - Homemade margarita pizza with baked beans and some chopped up peppers on the side.

I'm not veggie but today was a veggie day. Will prob have some fruit later and maybe something leftover from my selection box.

Breakfast: crunchy bran and milk, coffee

Lunch: chicken salad and a protein yoghurt

Dinner: not sure yet. I have an incredibly sore stomach and really nasty reflux (god knows what from) so it might just be dry toast or vegetable soup

Just sorted what I’m having for tea. It’ll be a gammon sandwich, job done.

So today has been a chocolate digestive, a gammon sandwich, gallons of tea, about 10 roll ups and by mid evening 240mg of codeine.

Pretty healthy day. 🤔

Lunch - ham, mayo, gherkin, slice of vegan cheese flatbread, crisps, apple
Snack - apple
Dinner - chicken stir fry and 140 calories of dark choc

I use barley flakes and a small amount of pearl barley. Easier on my blood sugar levels than oats but tastes almost the same.

Toast (homemade bread) and Marmite. Greek yogurt and stewed blackberries. Homemade coleslaw and grated cheese. Three chocolates. A couple of Ryvita. An apple. Tonight's dinner will be sardine fishcakes, green beans and roast tomatoes. Then some Bailey's ice cream (left over from Christmas.)

B- usual porridge with almond milk, cinnamon and berries, also some honeydew melon that needed eating

L- 1/2 ham and cheese toastie and 1/2 cheese and beans toastie at Costa with my daughter who couldn’t decide what she wanted!

D- small margarita pizza with a side salad

Snacks- more melon, I’ve been picking at Haribo all day and I think I’ll very most likely have a bowl of porridge with peanut butter and banana once my daughter has gone to bed as my stomach needs something warm
