What did you eat today?

A few months ago there was a really fun series of threads where people listed what they’d eaten that day (and had a general chat).

I really enjoyed it but can’t find it anymore so I thought I’d start one.

It was really interesting and varied (it’s not a weight loss or judgy thread- unless the judgement is ‘that sounds delicious, what’s the recipe/where did you buy it?’). Everyone is welcome!

Today I’ve had:
Breakfast- Scrambled eggs, sautéed veg (tomatoes, red onion, spinach, mushrooms). And tea with milk.

Snack- Americano with milk

Lunch- Chicken salad (chicken breast, cucumber, tomato, lettuce, avocado, sesame dressing).
Followed by low fat Greek yoghurt with peanut butter, strawberries, nectarine and blueberries.

Dinner- Will be roasted salmon, homemade potato wedges, roasted courgette/tomato/onion/fennel.
Followed by a watermelon and lime ice lolly (I make my own so it’s just fruit).

I’ve just started weight watchers so it’s not the most exciting day (I’ve also tried to cut out UPFs as much as possible and use my points on high fat whole foods like avocado and nuts). I’m looking forward to living vicariously through other people’s treats!

B - yoghurt, blueberries, seeds, honey
L - M&S bang bang chicken salad. Chocolate-covered almonds.
Snack - LOADS of raisins. A latte.
S - M&S salmon fish cakes, rocket. Yoghurt with banana, raisins, chocolate sauce

I had a packet of Bounty Crispy Rolls, which are alright, but pretty uninspiring, and four homemade marshmallows which are fabulous if I do say so myself.

Breakfast today was the apple baked oats, Greek yoghurt
Lunch- carrot soup again and cinnamon raisin soda bread
Dinner- got to take the child into town to buy new trainers and wellies so we'll get something out, which will probably be Wetherspoons, and I will probably have an all day breakfast.

Breakfast was a lemon fibre one (school drops offs and then on to a physio assessment and I needed something) and then two warm weetabix with semi skimmed milk.

lunch - a salmon fillet with something.

dinner - Cajun chicken tray bake apparently.

B: wholemeal basmati rice (50g) with homemade butter bean hummus (45g)

S: cashews (10g), marinated tofu (50g),

L: broccoli (220g), cabbage (100g), in homemade cauliflower and bean soup. Sounds weird but tastes delicious and high in protein

S: apple, couple of dried apricots

D: mixed beans and soya chilli and wholemeal rice

I am focusing on making sure I get enough protein and lots of variety. I am quite active and vegan.

Just made it up but...

Onion, stock of celery and a carrot sweated down
Add massive cauliflower, water, stock powder/cube
Add tin of chickpeas
Bring to boil and simmer for maybe 10 minutes
Add tin of cannellini beans
Blend it all up.
It is really creamy.

I use a big pan, get 8 really filling portions. My children eat it but they wouldn't eat cauliflower, chickpeas or cannellini beans otherwise 😆

And because I like to know these things...152 calories and 8.1g protein per portion (@8 portions)

@FurForksSake yes it is- the one we go to is very good for what you pay. The food isn't fancy but there's always something the child will eat, it's quick, still quite cheap and I've never had any problems.
I go in for a quick coffee a lot if I'm out and about on my own because it's nice enough and again, cheap.

Smoothie - spinach, blueberries, half a banana, chia seeds, milk, ice, vanilla protein powder.

Cottage cheese tomato soup - saw it on instagram - didn't rate it much but probably would have tasted better with more seasoning, and fresh rather than tinned toms, as was quite bitter.

Chilli & lime salmon with avocado, rice, soya beans.

Walnuts, cashews, dark chocolate.

Snacks - 4 squares chocolate, slice of shortbread, raspberries, handful pistachios
Dinner - plum tomatoes on a slice of German rye toast, handful of cherries.

nibbles of fondant icing as I was creating something and have a very sweet tooth!!!

minced beef with vegetables and potatoes, a sort of cottage pie but potatoes mixed in rather than mashed.

wholemeal bread with Roquefort and tomato, apple.

Last of the baked oats for breakfast, forgot the banana, have run out of yoghurt.

Last of the carrot soup, cinnamon raisin soda bread and some Double Gloucester for lunch

Dinner is pork chop, baked onions, steam pack of broccoli and cauliflower, and stuffing. Can't wait!
