What did you eat today?

A few months ago there was a really fun series of threads where people listed what they’d eaten that day (and had a general chat).

I really enjoyed it but can’t find it anymore so I thought I’d start one.

It was really interesting and varied (it’s not a weight loss or judgy thread- unless the judgement is ‘that sounds delicious, what’s the recipe/where did you buy it?’). Everyone is welcome!

Today I’ve had:
Breakfast- Scrambled eggs, sautéed veg (tomatoes, red onion, spinach, mushrooms). And tea with milk.

Snack- Americano with milk

Lunch- Chicken salad (chicken breast, cucumber, tomato, lettuce, avocado, sesame dressing).
Followed by low fat Greek yoghurt with peanut butter, strawberries, nectarine and blueberries.

Dinner- Will be roasted salmon, homemade potato wedges, roasted courgette/tomato/onion/fennel.
Followed by a watermelon and lime ice lolly (I make my own so it’s just fruit).

I’ve just started weight watchers so it’s not the most exciting day (I’ve also tried to cut out UPFs as much as possible and use my points on high fat whole foods like avocado and nuts). I’m looking forward to living vicariously through other people’s treats!

I’ve got some Korean chicken bites snack pack I’ll eat at lunch, it was on Ocado flash sales.

dinner is chicken stew, it was going to be with dumplings but the dumpling mix didn’t come and I don’t know I have it in me to make them.

dessert - only on a Sunday - vienetta salted caramel.

I have assembled the casserole, soffrito fried off, couple of chopped up carrots, a bag of frozen pearl onions, swede (microwaved so I could dice it), baby potatoes and chicken thighs. I used as a sachet or casserole mix, no idea how why, but I bought it and some chicken stock paste. Anyway, it’s now too heavy to transfer to the oven so it’ll have to cook on the hob.

Cheese & red onion omelette, tomatoes
Brazil nuts, dried apricots & figs
Tandoori chicken leg, gunpowder potatoes, kachumber salad & raita
Small bar dark chocolate with sea salt

Today:
Black forest fruits, kefir & greek yoghurt, chia seeds, ground seed mix
Golden kiwi
Sourdough with houmous, grated carrot, quick pickled red cabbage & spinach
2 x figs

Planned for later: sausage & lentil casserole, butternut squash. mixed green veg

Chicken, stuffing, sprouts, carrots, gravy and, protein pud and cherries for after, might have a frozen chocolate cherry.

Smoothie - oat milk, half a banana, chia seeds, peanut butter, ice, scoop of vanilla pea protein. So good.

Joe & the Juice tunacado sandwich

Chai latte, stroopwafel

Spaghetti bolognaise with melted cheddar

A pretty much perfect day of eating

S small bar hazlenut and raison chocolate

D chicken kofta, rice, carrot, apple, raisin and walnut salad, quarter of an avocado.

Ended up going to a party with the child and got asked to stay, and was given fried chicken, soup and puff puff, and very very nice it was too.

Mug of tea and porridge with raspberries & yoghurt
Water
Tomatoes and poached eggs on toast, cup of tea in a cafe.
Mug of tea and banana cake when we got home
Cheese & crackers and a glass of moretti beer, more tea and a bit of apple pie.

Stew was made, kids were horrified. They’d been out from 7am till 7pm at a scouts activity day. I think they’d rather have had frozen pizza and chips instead of a chicken and lentil stew!

Today I'm having spiced apple baked oats for breakfast (NY Times recipe and very nice) with Greek yoghurt
Lunch is carrot and red pepper soup and oatmeal bread, butter
Dinner is onion and apple pie, peas, blackberry crumble.

They ate in under duress, I did give them some sourdough AND Frozen mash with it. I thought it was nice and I’ve got five portions of it in the freezer.

today - not sure about lunch, I may need to eat up some salmon.

I don’t need to eat the salmon today, so I’ve had some boom bites grapes (red grapes that taste like red berries, must have been on an offer as I wouldn’t choose red grapes), really tasty! And a protein mousse. That is brunch and then pasta later.

Smoothie - banana, blueberries, Greek yogurt, chia seeds and collagen powder. Made with oat milk.

Breakfast - Scrambled eggs (3) and an avocado

Lunch - Tuna, with mixed salad greens

Snack - apple and some nuts

Dinner - Mash sweet potato, green beans and steak.

Supper - Hot chocolate and a choc chip biscuit.

So far I have had a soup that dd made us for lunch, root veg but very salty, we aren’t sure what happened! I’ve had several glasses of water since 😂
tonight I think we’re having spag Bol but I’ll probably have mine bolognaise on some sliced aubergine as I limit the amount of pasta I eat in a week and I had some only a few days ago.

I’ve heard this to be true but to be honest we were sitting down to eat it when we realised!
I mean it was a nice soup but just leaning on the salty side 😂
She’d really only made enough for 2 so there’s no leftovers to try and make the best of - I suspect the stock was too concentrated for the amount of soup…
