Why does my steak look like this?

Rump, grilled as I always do my steaks.

I usually have sirloin but they were out so got rump instead.

It looks extremely 'wrinkly' to me.

Is this standard for rump?

After watching Raymong Blanc demonstrating how to cook a steak properly I gave up trying to grill it and I pan fry it instead in a hot pan.

I oil the steak, not the pan, season it and cook for 2 minutes each side then rest it. This gives me a medium rare steak. While the steak is resting I deglaze the pan either with a drop of water or some sherry, then add a knob of butter then pour this over the steak.

I've given them a little Pat Butcher makeover to help feel more at home and less a fried (rice). <painfully unfunny attempt at a rice joke>

I heard an outlandish tale about rice, thinking about it, I don't think there was a grain of truth in it.

I’ve definitely ruined steak like that before. Never gone the extra mile and turned it into a gorilla’s hand though. That’s next level.

@RampantIvy it's given me such a much needed laugh this week!

Do you keep the pan at the high heat for the 2 minutes each side, or turn it down a bit?
I like my steak medium but it always seems to turn out well done for me. I would follow similar to your way but have always turned down after 1 minute each side as the pan gets too smoky... wonder what I'm doing wrong 🤔 oh and I would cook 3 minutes each side in total.

I have it high, but not the highest. I close the kitchen door or I would set off the smoke alarm Grin and have my hood extractor on high.

I use my griddle pan for cooking steak. The smoke is often from the fat in the pan which is why I oil the steak and not the pan.
