I use any potatoes (usually cheap big bag from tescos) but I hassleback them for extra crispyness (thanks early 90s Delia). I do a mix of big and small sizes of potato. Boil for 5, drain, toss roughly in spoonful of flour, put in hot fat goose or duck fat. cook at 200 for about 30-40 mins. Baste and turn potatoes several times while cooking. Remove and eat when crispy, I pop on kitchen towel before plate so not too greasy.

needed shaking and they look a bit dry to me but tbh they look like my local pubs roast potatoes. I was thinking they would be totally dreadful.

Can I share my tip for roasties? tried this once about 5 years ago and never did them any different since. AMERICAN CHIP SPICE! Honestly after you have par boiled them and chucked them round the pan so they are fluffy, a good dollop of oil then salt, pepper and a generous coating of chip spice.

Try it, I promise you wont regret it!

And always use dripping or lard
