Hi all

This is our second thread about upping our veg and fruit intake on a daily basis.

We tend to list what we've had to keep us accoubtable and generally chat about how to increase the rainbow on our plate.

We don't always make 10 but anything more than you would normally is great. I like to at least get 5. 10 or even sometimes more is a great day.

All welcome whatever reasons.

I list servings. So if I have a half serving I pal it up with a different half serving of something. Hence some weird combinations. I don't ever have sweetcorn mixed with berries. 😅

I'm not sure if I'm doing servings or types of fruit and veg. Maybe a mix!

Appetite slowly coming back today so here's today's plan...

Breakfast.... porridge with tinned pear on top

Lunch....bubble and squeak so potatoes (not counting those) sprouts carrots and I added half a bag of spinach in to wilt aswell. satsuma to follow

Dinner.... having m and s Chinese takeaway box so not very veg heavy I'm afraid!

Thank you @MaybeHeIsMyCat I will check them out. I need some condiment inspo for my salads as I'm bored of shop bought dressings. Pomegranate molasses dressing is yummy but another that's not as easy to get hold of! (It's also a great addition to hummus, @Breathmiller).

Today's list-

  1. mixed salad leaves with extra spinach/kale/red cabbage
  2. cucumber
  3. cherry tomatoes/kidney beans
  4. spring onion/radishes/pepper
  5. half carrot/sweetcorn
  6. satsuma
  7. almond stuffed dates
  8. cauliflower (and potato curry).

Another listing servings. So 7 cherry tomatoes are 1 serving. But as I only had 4, I paired it with kidney beans as that was also a half serving of 40g/around 2 tbsp.

Ooh, pomegranate molasses sounds right up my street. Thanks Twentin

I like the balsamic glaze as a topping for my salads. And pumpkin seeds.

Newnews i forgot about baked beans, they count and a quick and easy heat up when you're having something quick from the freezer.

2, 3, 4. Chestnut and root veg stew (chestnuts, mushrooms, onion, carrot, turnip) 5, 6, 7. Stuffed peppers (peppers, courgette, onion, peas, tomato puree)

Yes, I list servings too.

  1. Grapefruit
  2. Cherry tomatoes/rocket
  3. Sweet potato
  4. Mixed beans
  5. Peppers

The last 3 were in Jamie Oliver’s Smoky Veg Chilli which I had previously frozen, so can’t remember if there were more than 3 portions - it sounds about right though.

I'm in, not a lot today but I've prepped loads for the week.

Today -

Chickpea and lentil curry

Onions
Tomatoes
Peppers
Spinach
Red lentils
Chickpeas

Grapes with my cheese on crackers.

I have started some prepping as me and my dc are going to be in a competition from tomorrow for eating the most f&v so this thread is timely. I have washed and cut up carrots, cucumber, celery and radishes. I have also washed and put grapes in little pots for us. Apparently if you put kitchen roll in the bottom of the tupperware your cut fruit and veg lasts for 4 days.

Didn't make all 10 today.
1.) Carrot juice shot
2.) Blueberries
3.) Tangerine
4.) Yellow tomatoes
5.) Lettuce and rocket
6.) Butternut squash
7.) Purple endive and red pepper salad
8.) Tried to eat an apple but it was cottonwool so threw it out for the birds.

Haven’t done great recently but hopefully back on it tomorrow!

Yesterday I got

  1. Smoothie
  2. Veggie burger
  3. Melon
4 and 5. Veggie chilli (beans, peppers, onions, tomatoes)

None so far today Blush but I’m having veggie fajitas for tea so that should help it a bit

Well done everyone.

I had a grump day so surprised I made it as much as I did. It was a struggle. I could have easily had 10 bars of chocolate a day instead.

And I might add in apples but in a deep filled apple pie (that is currently sitting looking at me) so probably doesn't count as it's so full of sugar.
