Hi all

This is our second thread about upping our veg and fruit intake on a daily basis.

We tend to list what we've had to keep us accoubtable and generally chat about how to increase the rainbow on our plate.

We don't always make 10 but anything more than you would normally is great. I like to at least get 5. 10 or even sometimes more is a great day.

All welcome whatever reasons.

plantsandpuddlesuits yes, sweet potatoes count but not ordinary potatoes.

I often swap out for sweet potato wedges or fries

Here is the link to the guidelines that I used at the beginning.

I was quite strict to begin with in terms of portion sizes but not so much now as I don't seem to need so much food. It is interesting though to read through what is counted (beans and pulses for instance) and what is not (more than one kind of juice or smoothie only counts as one) .

Along the road we have made executive decisions on this thread, such as Christmas pudding most definitely counts and if we are doing 10 then we allowed 2 portions of pulses/beans a day. We never did come to a decision about whizzed soup but I only ever count it as one, like a smoothie.

But in truth, there are no rules and regulations. It's just about shining a light on our healthy eating and encouraging more fruit and veg into our diet.

My main aim was to let go of the endless cycle of dietineand eat more normally and I have done that. Focusing on what I can eat and letting go of control, feast or famine cycles. Along with other things I've done it has happened and I feel so much more happy around food and my body than I have done in decades.

Ooh I like the sound of this thread! Today we had salad chicken fajitas and so I managed:
Lettuce
Tomato
Sweetcorn
Avocado
Red pepper
Grapes

Tomorrow going to try a new recipe of sweet potato and chick pea pittas with hummus carrot and pepper on the side.

Some days we don't manage more than one veg though.

Stir fry veg half a pack.

Chickpeas sounds good @OrangeBlossomsinthesun and welcome to the thread! Sort of similar but I like quesedillas for lunches they can be quite veg heavy. Black bean sweetcorn and pepper is a good one.

Fajitas also fab for veg. We like tofu fajitas.

One of my go to lunches at the moment is what I call fridge gravel hash 🤣 I roast a load of sweet potato and butternut squash and it keeps in the fridge for a few days. Fry this with any leftover veg I like mushrooms courgettes and spinach. Can also add leftover sausages etc. Then crack an egg in the middle and pop a lid on. Lush!
