Hi all

This is our second thread about upping our veg and fruit intake on a daily basis.

We tend to list what we've had to keep us accoubtable and generally chat about how to increase the rainbow on our plate.

We don't always make 10 but anything more than you would normally is great. I like to at least get 5. 10 or even sometimes more is a great day.

All welcome whatever reasons.

@Plantsandpuddlesuits I am very partial to brunch also. It is a good meal that can contain more veg than breakfast.

Brunch - onions, chinese leaves, peas, carrots, sweetcorn
Dinner - puy lentils, onion, tomatoes, mushrooms, red peppers, carrots, spinach

Brunch hash sounds good. I should get a squash roasted, I did some beetroots today as I was in all afternoon. Bonus is it warms up the house too!
Today's attempts:
1 kiwi
2 satsuma
3 Broccoli
4 tomatoes
5 roasted beetroot (so lovely)
Plus some cabbage but not a portion size.
Plus my trusty potatoes.😉 Oh and a few defrosted blueberries with my snack of nuts.

My cooking is more basic preparation, so I just slice and roast in a little oil and salt. I do sprinkle some herbs on if I think about it, thyme most often as I have it about in some form.

Today I wasn't too hungry but did manage quite a number of different plant foods as I chucked in the nuts, seeds, herbs and spices.
1 Apple and satsuma
2 spiced carrot, onion and ginger soup
3 black turtle beans
4 shallots, garlic, ginger
5 beetroot
6 blueberries
Plus some fresh tomato

Hope everyone is well, it's gone rather quiet! Been back from my break and only today have I really started eating properly again.

@ThisTownAintBigEnoughForBoth Thank you, it wasn't a great start but we then went to my lovely MILs in Leicestershire for a couple of days on the way back and that was good fun.

Today I managed-

  1. Mixed salad leaves with extra kale
  2. Spring onion/carrot
  3. Cherry toms
  4. Cucumber
  5. Radishes/red cabbage
  6. Onion/garlic/ginger
  7. Cherries
  8. 2 satsumas

Hi all

Great to see this thread has kept going in my absence. I had a planned break from mumset for a month. It was great but also good to be back. I am doing a project on discipline this year that ties in with my job/belief system.

So, every month I let go of something I may be slightly over attached to, like mumsnet and add in something I know is good for me but I don't dedicate enough time to. This month's was reading.

Anyway, I noticed that my fruit and veg intake definitely went down a bit without this thread so I'm back but not necessarily every day.
It was quite nice to see how much had just ingrained into my daily life though and I'd say that most days I reached 5 a day easily with no thought about it. Which is kind of what I was aiming for. Just naturally adding in more healthy options.

Someone back thread asked about vegan toppings for baked potatoes with protein. Sorry, I can't skip back now, I've started the post to check who it was.

I like...
•Salad with a good helping of homemade houmous and pumpkin seeds.
• green lentil chilli or red/green lentil bolognaise
•Lentil dhal (i like mine really lemony)
•ratatouille with kidney beans
•tin of mixed bean salad with vg Mayonnaise to make a creamy bean salad. I also add sweetcorn and chopped spring onion. This is an easy one.
• ready made packets of green or puy lentils. You can heat them up or just have them cold. You get a few different flavours. I usually add in chopped beetroot and tomatoes.

Hope all have a good veg and fruit day.

(This month I am letting go of refined sugar products! Eek!!)

My lentil dhal recipe is...

Oil
Mustard seeds
Cumin seeds
Fennel seeds
Cardamom pods
Coriander seeds
Garlic
Fresh chilli
Onions
Red lentils
Veg stock
Lemon juice
Fresh coriander (if I have it)

Pop the mustard seeds in hot oil with a lid on (like popcorn).
Grind the other seeds with and mix with the garlic and chilli to make a paste. I like mine really flavoured so the more of each the merrier.

Add to mustard seeds and cook through in the oil. Add in the onions and sweat til all softened. You will have to keep an eye on this. Sometimes I put the onions in first.
Then add the red lentils and mix in to coat them all with the spices. Add plenty stock. Bring gently to the boil then put the heat right down and put a lid on. Keep an eye on it. If it's starting to stick, add more water/stock and stir more and put the heat lower. Add in plenty lemon juice, salt and pepper and chopped fresh coriander.
Cook til mushy. If its too runny you can either take the lid off and cook and stir til the liquid cooks down or eat it like a soup.

I tend to make it in advance and pop it in the freezer. It's great to make other curries one night and and a portion of dhal to the meal too.

In fact I'm going off to make some now that I've thought of it.

We had roast cauliflower curry, lentil dhal and rice for dinner after reading up about all your suggestions of dhal.

I had about 4 meals today instead of my usual 2 in my eating window. But clearly the wrong sort of food as I only made it to 6. Felt like more!

I find this thread useful to check in on how I'm doing.
Today
1 cannellini beans
2 sweetcorn, red pepper
3 onion, swede
4 kale, mushroom

A bit of regression to no fruit and eating toast or crackers as a default. I will pay more attention tomorrow.

My health focus these last weeks has been moving to exercise, getting my steps in etc.
