Hi all

This is our second thread about upping our veg and fruit intake on a daily basis.

We tend to list what we've had to keep us accoubtable and generally chat about how to increase the rainbow on our plate.

We don't always make 10 but anything more than you would normally is great. I like to at least get 5. 10 or even sometimes more is a great day.

All welcome whatever reasons.

ThisTown if you can get hold of vegan mayo, I like mashing in a tin of chickpeas (so that it still has some texture). Then stirring in a tin of sweetcorn. Have it cold on top of the hot potato.

It is a bit like tuna mayo.

I really need to get back to eating more veg. Today I had:
2 small apples
Portion broccoli
Portion lentils
Half portion peas
And ready meal curry made of tiny amounts of cauliflower, carrots, sugersnap peas.

Oh thank you for all the suggestions, I do like chickpea tuna substitute but never thought of it with a baked potato! another great idea. The lentil pouches look handy, I love an easy option. Pesto or garlic mushrooms sound quite decadent. We are creatures of habit and nearly always have baked potato on a Sunday so I'll pick a new thing to try this weekend and report back.

Today I ate so many veg I gave myself indigestion AND wind Blush

Breakfast with apple, grapes and peach (1)
Lunch was chickpea curry with brussels, cabbage and cauliflower (wayyy too many portions! 4?)
Dinner was sausages with a portabello mushroom and spinach (2)
and then the bedtime satsuma (0.5)

Ooh that looks interesting pawpaws. Any good suggestions in there?

Yesterday was:
Breakfast: grapes, peach and apple (1)
Lunch: bean salad: (2)
Dinner: broccoli, cauli, carrots (2)
Snacks: apple and the bedtime satsuma (1.5)

Oh, I thought it was going to be more than that! 6.5. I felt too lazy to make extra salad bits to go with my lunch so that's probably why.

Hello folks, I hope everyone had a decent day?

Twentin have you had a good break? Go anywhere nice?

Breakfast: grapes, peach, blueberries (1)
Lunch: Romaine lettuce, tomatoes, bean salad, coleslaw, (3 portions)
Dinner: Linda Mac Roast which is super processed but tasty, however I had it with some lentils and steamed brussels, corn, and carrots (3.5)
Bedtime satsuma still to come (0.5_
8 portions. I feel I am creeping towards 10!

Four is good in my book!
Today's portions for me:
1 mixed berries
2 lettuce, tomato, beetroot
3 parsnip, carrot, sweet potato
4 broccoli
I also had some tasty potatoes full of vitamin C and other lovely stuff!

I'll take bonus points on that Grin I'm not even going there with Valentines day - let's just say if cake and chocolate were veggies I'd have rocked it...

I am rather in a slump right now but will post yesterday's tally to encourage you all to beat my low bar!
1 mixed berries (thanks to my freezer!)
2 black beans
3 passata, garlic
4 Onion, mushroom, spinach
That was one vegetarian meal at the end of the day. To be honest I'd say it was less than 3 portions though more than 2. I have gone right back to my cheese sandwich / toast habits and somehow have forgotten to eat fruit.

I keep.l forgetting to post on here, am posting my meals on the slimming world threads aswell!

Today hasn't been great fruit and veg wise tbh.

Recently I'm really enjoying a sort of brunch hash type thing. I do a batch of roasted butternut squash on a weekend seasoned with chilli flakes and eat over a few days. For the hash fry the roasted squash and basically whatever veg I like mushrooms courgettes (again chop lots and keep ready in fridge) spinach, then make a hole crack an egg on and pop a lid on for a few mins. Really easy and delicious. Can also add leftover sausages or bacon or add tinned potatoes to make it more substantial. Easy way to get lots of veg in
