With my MN chicken I made 17 meals and three sandwiches.

It can be done!
Large chicken, don't know the weight but it took 2 hours 5 minutes to cook.
We had -
Roast dinner for five.
Chicken fajitas for four.
Chicken and bacon pie for five.
Risotto for three.
And three chicken salad sandwiches.

Two adults, the secondary school kids. Maybe we just don't eat much so our portions are small.

@DIshedUp I think it depends what you prefer
So if I'm making say a pasta bake with 4-6 portions I would add a handful of chopped bacon or one/two shredded chicken breast for flavour and a bit of protein. I do it because it's cheaper, adds a bit of flavour and makes me eat more veg Grin
Fajitas I would use 1 chicken breast for two portions depending on what was alongside it
But I don't really eat meat and veg meals where it's obvious that the portion is tiny so like chicken breast and potatoes and veg

Just me and DP here, and a roast chicken would be:

Roast dinner with potatoes, veg etc
Chicken and red pepper risotto
Maybe soup if anyone can be arsed, but usually the cat reaps the benefit of our laziness

If we do soup then that would do lunches a few days, but generally a chicken is two evening meals here, plus one happy cat. We probably do get a smaller bird though to be fair.

If you were having a roast dinner, what percentage of the meal would the meat make?

I would say about 20%.
I love a roast but if I were to list in order my favourite bits the meat would probably be at the bottom, depending on if there were carrots or not.

If you like veggies so much why do you feel the need to add chicken to every meal?

You could perfectly reasonably had a normal sized portion of roast and pie, then veggie risotto and fajitas? The problem seems to be the inability to eat a vegetarian meal and the desperate need therefore to spread out a chicken

I could make 100 meals out of one chicken if I added 1 peice of chicken to every meal. But my chicken hasn't actually fed 100 people, just because you put a bit of chicken in 17 meals does not 17 meals make.

It's personal taste isn't it? I eat meat so wouldn't leave it out of a meal particularly. But I guess I prefer other things. Stuffing, cauliflower cheese and Yorkshire for example are far nicer roast components than chicken. Guacamole, beans and sour cream much nicer in a fajita (we have two each!) than the chicken. Ds would probably just put cheese and mushrooms in his... Risotto and pie are all about the stock/sauce for me.

I'd do three each with fajitas/enchiladas/tacos etc.
I wouldn't put peppers in them as we don't like them, they may or may not contain meat, but if they do it'd be a decent amount, or it might be one chicken, one veg, and one bean.
There's also salsa, sour cream, guac etc.
