Ingredients - cake
100g caster sugar
100g ground almonds
100g dark chocolate, grated
6 eggs, separated

100g dark chocolate
1/2 pint double cream
Method
Grease and line a springform cake tin (I only have 1 so never remember the size - might be a 9 inch) and preheat oven to gas 3.
Whisk egg yolks until pale and fluffy, then fold in grated chocolate and almonds.
In a separate bowl, whisk egg whites to stiff peaks, and beat in sugar.
Stir 2 spoons of the egg white mix into the yolk mix, then gently fold all the yolk mix into the whites.
Pour into tin and bake for approx 50 mins, until skewer comes out clean.
Leave to cool in tin (it will sink, that's normal and will be hidden by the covering).
Once cake is cool, remove from tin. Melt the chocolate, whip the cream, add the melted chocolate to the cream, and spread it over the cake.
