Me. Yet again!

Just popped in to say:

Apple sliced and cooked in butter, sprinkle cinnamon and ground flax seed, Greek yog. Very, very tasty.

Hi @ColouringPencils. I've decided to take some of my oatcakes and hard ish cheese for lunches, and hope it will keep ok in the car.

As is customary whenever I go anywhere, the forecast is unseasonably chilly, with torrential downpours - clearing miraculously, of course, on the day of departure.

I will get up at my usual time of 530 Ish, and have a good walk in the rain, then have breakfast. Dinner at the local Italian. They do grilled meat and fish so I think I should be ok. I could crumble at the breakfast toast. We will see!

I'll report back ...

That sounds like a good plan @Words. And a lovely break, in spite of the forecast rain.

Breakfast toast is such a temptation, isn't it? This is embarrassing, but I used to go to sleep looking forward to the toast I was going to eat for breakfast. By 'used to' I mean before I started this last Saturday Grin, but I haven't actually had any bedtime-toast-thoughts all week, so I am considering that progress!

my vegan version...
Breakfast: chia seeds, flax seeds, one date and cinnamon with coconut milk stirred in, left overnight and then coconut flakes added as a topping

Lunch: chickpeas, olives, salad and seaweed flakes

Dinner: Avocado, salsa, minty potatoes, olives, strawberries and kale

Made myself some potato salad with Jersey new potatoes, home made mayo and a few capers. It's years since I've had potato salad and it was gorgeous. I had it with jumbo prawns, boiled egg, home made kimchi and hummus and a salad. I don't really like lettuce much so all my salads are made with a combo of rocket, lambs lettuce, pea shoots, spinach and water cress depending what looks good. I am now stuffed.

@Words did you cook it in the oven or a pan. Ground flax is a good idea instead of oats.

Tonight we had meatballs and spaghetti. I had Liberto Edamame pasta which is made with just edamame beans and nothing else. Tastes like pasta looks like angel hair spaghetti.

Its gluten free, vegan, hugh in protein, low in carbs. Assume its ok. Cooks in 4 mins. Very filling. I forgot I had it, bought for a previous low carb venture! Found it in the back of the cupboard. It's 3 months out of date 🤣 tasted fine.

Am stuffed.

Dinner was Mexican chili beef casserole with gnocchi (thanks DH) followed by a square of dark chocolate and some champagne as it's our 17th wedding anniversary 😊

Tonight's dinner was Briam. What I thought was feta in the fridge was Hallunlmi so that's what the Briam ended up with. I have enough left for dinner tomorrow.
1 aubergine
1 courgette
2 red onions quartered
6 garlic cloves peeled
6 new potatoes sliced thickly
4 large tomatoes smashed
A handful of baby plum tomatoes whole
A handful of fresh parsley chopped
Seasoning
EVOO

Brown the aubergines, courgettes, onions and garlic in the frying pan in EVOO in batches over a medium heat adding more EVOO as necessary. When browned layer them in a roasting tin, add the tomatoes and top with parsley. Sprinkle with more EVOO. Cover with a lid or with foil, put in the oven on 200 degrees for 90 - 120 mins. Use as a main course with feta cheese sprinkled on top (and bread if not avoiding it) or use it to accompany meat as a side dish.

Serves 2 as a main.

The Briam sounds delicious! Where is that dish from?

We had a barbecue last night, which seemed to work perfectly with this plan (except I couldn't resist a good quality sausage). Everyone else had bread but I didn't even miss it.

Today I had a large salad for lunch with cold meats and cheese.
Dinner is all day breakfast - bacon, eggs, mushroom, tomato and avocado for me. Everyone else is getting a bagel too but no avocado.

Love the look of breakfast!

Hmm. Minced lamb…. I’d Chuck some Middle Eastern spices in and skewer them up to have with a Greek salad.

Ended up cooking a steak and broccoli. DH went out so didn't open the lamb. Will have it tomorrow instead. Think I'll make koftas, greek salad, tzasiki (can't spell!) rice and salad.

A friend brought us a box of seashore vegetables, so we had pollock with samphire and poached eggs last night. I’d never had samphire before - it was nice. Very salty though.

I’ve been a bit wayward in the last few days - lots of leftovers from Sunday party in the house, plus little row with partner making me feel a bit depressed. All good excuses for eating things I shouldn’t!

Anyway, I’m definitely at a weight set point, as despite crisps, ice cream, pavlova and bread (and no exercise since Saturday) my weight hasn’t changed. I did feel a bit bloated and inflamed though.

Back on track now, and all friends again chez Leadbetter.

I will be interested to hear if your new tweaked eating and exercise regime produces any results as I sense we are both in a similar boat- though I have further to go than you do.

I love samphire but it's hard to get hold of here.

I've just had a superbly fresh grilled mackerel and large green salad. Soooo good! If anyone sees any, do buy it. It's so good at the moment. (UK) Very inexpensive and packed with O 3 too.

Inspired by the lovely home made yoghurt on holiday, I am going to order a yogurt maker. Will report back!

Cooked the lamb in sausage shapes with cubed potatoes, greek salad and tzatziki. Tres bien!

Can I share a better alternative to tortilla wraps?

I know wheat is not on plan (look, I cannot stick to this WOE 100%!) but if you really need a wrap these are a good shout. Only 4 ingredients. Available in Sainsbury's and Waitrose.

Someone on one of the many UPF threads, after that BBC doc, recommended them.

Those ingredients in the wraps have shocked me!! Wowzer!! I’ll be looking out for the other ones for sure. Do they do a wholemeal variety I wonder.
