Today has been
L: grapes, 2 plums, sticky rice traybake with butternut, cashews and broccoli
S: handful of pistachios
D: potato and violife feta bake with cherry tomatoes, beetroot and Bombay carrot salad

There was a little toasting in this house too, although it was more in tequila 

B: porridge with soya milk, blueberries, maple syrup and seeds
Snacks were dates, easy peeler, grapes
Dinner was a huge roast (Christmas dinner trial #1). I loosely followed the chestnut loaf recipe from @ppeatfruit and made a Wellington. Had with roast potatoes, parsnips, butternut squash, peas, carrots, sprouts, broccoli, gravy and cranberry sauce

Ha !! yes PartTime but not if you include lunches! How did the chestnut loaf go? you can't have been Part Time if you were solely responsible for that pile of food !!!!)

So you toasted with 2 bottles of Tequila eh IJumped ? (joke) !! Amazing news though! (I'm not religious but I was praying for JB) !!!!!

Hi!

I am joining the thread quite late, but have been skim reading it and enjoying hearing / reading about what everyone has been eating.

I have The Green Roasting Tin book too, but had never thought of doing the rice dish from the op, as I have an irrational hatred of butternut squash! I'm sure I could switch it out for something else. Thanks for the recommendation.

It is only 9.30 AM, so obviously it could all change, but, today, I'm planning to have:

B: porridge with soy milk and nuts
L: jacket potato with hummus and salad
D: homemade broth (veg soup with lots of leeks, carrots, grains and pulses)
Sn: probably loads of crisps in front of nonsense comedy shows later Blush. Maybe salted almonds and oat cakes, if I'm feeling like a more grown up snack Wink.

I was also over the moon with the election result. I am a 🇺🇲 citizen, living here in the UK. Biden was definitely my preference. I guess there is still time for something else to go wrong, but I feel as if this is it... Praying for a reasonable transition and no nasty surprises now.

@ppeatfruit the chestnut loaf was good thanks and the rest of the fam liked it too so it's the first to make it to the Christmas dinner shortlist. I am hoping that the 4 of us can agree on what makes the top spot though!

Do you like sweet potato? DH doesn't like butternut but does like sweet potato so I often sub if he's going to eat it. I'm sure that would work for the roasting tin recipe

Thanks op. Yes, I do like sweet potato and was thinking the same thing Smile.

I've made a blunder with my soup for this evening and forgot that my soup mix has to be soaked overnight. So think that will end up being lunch tomorrow. Three bean chilli this evening, as it is basically just store cupboard ingredients, plus some sweet potato and other veg.

L. Beetroot salad/spelt toast/pnut butter
S. Bowl of Amisa spelt flakes with almond milk and molasses
Picked at a HM leek crumble.

I'm very glad that the chestnut roast turned out well PartTime Did you buy ready pureed chestnuts?

Plan today is:

B: All.The.Caffeinated.Drinks. and Toast, (I've woken up weirdly tired today, with no real reason to be, so caffeine and carbs are pulling me through the morning)!
L: broth, (the one I couldn't make yesterday)
D: mushroom strogonoff, brown rice and salad
Sn: PB on apple slices and cut up carrots...possibly a square of Vego. Got given some as a gift recently and I'm rationing it to myself. It's delicious, but rich, and probably something I wouldn't want to eat a lot of in one go.

@ppeatfruit I bought 2 pouches (merchant gourmet). One was whole chestnuts and the other purée and I used both

B: coffee/dates/pb powder/banana/soya milk smoothie
L: a portion of the ottolenghi root veg and rose harissa chickpeas from Friday. This time served with plain yogurt and I'm not sure I could tell the difference!
D: stir fry veg with rice and Tofoo sweet chilli bites
S: pear

B decaf black coffee, almond granola & milled linseed, various seeds sprinkled on, soya milk.

L homemade veg lasagna, no cheese (ran out)

D homemade cowboy stew with vegan sausage, beans, various lentils, tin of tomatoes, paprika & steamed spring greens.

Not been on for a while but been catching up. Lots of delicious ideas.

B. Avocado, lemon juice, and pumpkin seeds on toast.
L. Tomato and veg soup.
D. Sausage casserole, cauliflower and leek cheese. Boiled potatoes and brocolli. With baked cinnamon stuffed apples for after with oatly creme fraiche

All lovely autumn food.

L: ginger granola with extra walnuts and chia seeds with soy milk
D: bean burger, crispy potatoes and salad

@ppeatfruit - merchant gourmet are available from Tesco (think I've seen some of their range in Sainsbury's too)

B: oats soaked in soya milk with soya yogurt, raspberries, blueberries and seeds
L: lentil and squash bake with broccoli
D: jacket potato with naturli, black pepper and nooch with a big salad
S: half a large pot of alpro cherry yogurt

Oh yes Depuis Our children used to love that !! They've grown out of it now (I Hope!) I remember dh bringing back a jar of it mixed up from the States. You can get it in Eng. now I suppose.

Sn.S. Decaff coffee\frothy almond milk ground mixed spice and nutmeg. Reheated leek crumble and spinach.

L: harissa roast aubergines, olives, garlic, peppers and cherry tomatoes, mixed into cooked green lentils, dry fried cashews on top
D: chickpea and tomato curry, from bbc good food website
Sn: fruit and veg..maybe some salted almonds, but strictly avoiding crisps and chocolate today! I'm getting a bit chubby. Blame lockdown stress and chocolate.
