Morning.

Just setting this up before the old one fills up.

For anyone new, this is a cafe where you can come, eat (calorie free) drink and be merry.

There are kittenbees in the café, which are kittens the size of bees, they are friendly but do nibble the pastries.

Outside are their larger 'cousins' the Bumblecats, they are not as friendly.

Leo is a Lemur who now runs the outdoor dog wash.

Florence is a French pastry chef, Fernando is a cocktail waiter.

Outside is a water feature and a petting zoo.

Morning.
IRL I have not made pickles for ages, I 'double spice' mine, so I used spiced vinegar and still add pickling spice, I also add a little bit of raspberry vinegar. I make piccalilli, mango chutney and tomato chutney.

Back to the café but I am bringing the chutneys / pickles with me.

Well to go with pickles I think we need cold cuts and some sharp salty cheeses. Florence is making soda bread and Fernando is making eggnog and I'm going to teach Leo how to pickle the eggs he boiled overnight.

@sashh I have never tried making mango chutney but I really like it , is it easy to make ?
Cold cuts and cheese will be very nice , can you get Florence to make some garlic bread too please.

Really easy. For a jam jar full

2 mangoes, peel one but not the other (depending on the size, this is for supermarket large size mangoes).

A 50/50 mix of pickling vinegar and sugar, about 1/2 a jam jar of each.
A hand full of raisins

Any spices you want to add, usually add a teaspoon of turmeric and 1/2 teaspoon of chili flakes.

Chop both mangoes, put them in a pan with the other ingredients.
Bring to the boil and turn down to simmer. Simmer for as long as possible, a couple of hours if you can.

When you can draw a wooden spoon across the mixture and it leaves a clear trail that holds its shape for a few seconds it is dun.

Put in a sterile jar with a sterile lid. It is edible straight away but is better after a couple of weeks.

I 'sterilise' the jars by putting them in the dishwasher on a hot wash and I don't open the door until I am ready to use them.

You can basically use the same recipe with any veg / fruit. Yellow pepper and apricots was a hit.

I need to buy more ingredients for the picking spice as I have run out but I will give it a go soon

I wonder if it'd work with pineapple, they are really cheap atm.

Well as chutneys are popular I'm going to make filo parcels filled with brie and mango chutney.

Florence is making apple strudel and Fernando has spiced cider.

Leo, well he is attempting cheese soufflé with goats cheese.

Has anyone seen the thread that the op is complaining about honey been unexpectedly added to her cheese ? I have never tried it and tbh I don't fancy it but I might give it a go at weekend

It's a slow start for me today.

IRL I do have a Japanese square pan and I have been known to make rolled omelettes in it. I also have a couple of Japanese knives.

My carer has a Japan obsession and tries to get there every year, which on carer's allowance is not an easy feat.

Anyway hand orders to F and F.

I genuinely didn't know there was such a thing as a square frying pan, I once owned a square skillet but it was only a cheap one so no good .

I'd love to get some good knives and I know the Japanese knives are some of the best but it's mind boggling the amount that some can cost !

Back to reality, it's idiot o'clock and I'd like something quick and easy so beans on toast please Florence.

@ScottBakula I inherited a black cast iron frying pan from my Aunt. It makes the best cornbread with crunchy edges. When you come visit, You can use it.

I expect the souffle has gone a bit flat by now so can I also has a slice of chocolate cake with a little bit of single cream .

@Sweetpea1532 that's very kind if you thankyou . You will have to show me how to make corn bread too.
I bought a cast iron Dutch oven about 2 years ago and while I like using it the lid part weights a ton so if I do use it I need a load of spinach 1st !

@ScottBakula . 🤣🤣🤣 yep, they are heavy...spinach sounds like a good idea...maybe THPC can serve some spinach quiche.
