I’ve got a rhubarb jungle in the garden. I really must sort it out. I love rhubarb but I’m trying to shed some winter comfort eating pounds and rhubarb needs a bit of sugar and ideally I’d make an easy rhubarb fool - mix in with the best supermarket custard and some whipped cream. As I’m the only member of the family who likes it I’m just leaving it to go wild.

I can recommend the Waitrose recipe for sticky rhubarb and ginger cake which may not help you but it’s very good!
