I don't like the sound of either of those first two dishes. But Louisa's sounds nice (apart from the mushrooms).

The only sous vide I ever admired was on bake Off (believe it or not) when somebody cooked a pie filling (I think) with a homemade sous vide (plastic bag and a straw). I just admire the ingenuity.
