I put bacon in my colcannon too. I may even do it in ramekins with cheese on top.

Foxessocks, its really easy, boil potato, boil the kale, mash the potato, chop the kale, use springonion, chuck it all in a bowl and mix together add salt and pepper and butter, if you don't want kale you can use cabbage
