Swede at Christmas

I'm the only one who loves swede and I want it at Christmas dinner, but not to do it on the day. Previously when I've cooked and frozen swede it's a bit watery. Any tips or advice? Could I be overcooking the swede or not draining it enough?

When I have mashed the swede I put it back on the hob, and stir well to dry it out a little

Cook it like a baked potato in the microwave then scoop out the middle, mix with butter and season. Perfect every time.

Singing swede , pop in microwave for about 20 to 25 mins , on a plate, do not pierce or score . When done scoop top off and scrape the flesh , mash with butter

Ooooh. What an amazing idea. I'm definitely trying that! Swedes are big though. Do you microwave whole? It must take a while.

Make it a day or 2 in advance and reheat. It doesn’t make a difference to taste or texture.

Yes you do it whole it takes a while 20-25 mins and saves all the peeling and chopping does make quite a noise hence squeaky swede ,I usually turn mine a couple of times during cooking i.e upside down

This is genius! Can’t believe I have never thought of it and instead spent ages peeling, cutting and boiling it 🤦🏽‍♀️ I love mashed swede and carrot

I know right?! I love swede but they are a bugger to peel and chop and it puts me off. I'll be trying this very soon.

Yes, microwave whole, I do it for 7 mins at a time then squeeze to see if its soft. Usually takes 15 mins total for a medium size. Easy to prepare in advance then warm in microwave before serving.

Off to buy a swede and try the singing swede!
I love it mashed but it's a pain to prepare and can be watery.

My life has just been changed. I have swede at least twice a week and I had never even thought of cooking it in the microwave, or cooking it whole!!

Can you promise me it won't explode?

Does it get supersoft so that you barely have to mash it?

Do you remember that 70s ad for Smash when a load of metallic aliens laugh at humans for the way that they make mashed potato? I feel sure they are laughing at me now for all the labour I have put in over the years cooking swede the primitive way.

But, again, can you promise me it won't explode? I fear it might be like microwaving a hand grenade.

I've never bought frozen swede, but my technique might help with that too.

I peel, chop, boil it, but then use a potato ricers. I squeeze out as much of the water that I can (there is loads!) before pressing harder for the swede to actually push through. I always comes out so much drier than using say a hand masher.

I always cook from fresh, cut into small pieces, then I mash together with carrots, add butter and white pepper and serve. One of my favourites

So I pop it whole on a plate , microwave for about 15 mins and check it . Then few mins bursts until it feels soft . It does sing but has never exploded 🤯 Then I scoop out and mash with a fork

I do it the day before. Chunk, boil, drain and dry for a while under a tea towel before mashing with lots of butter and pepper. Then pop in a serving dish and microwave on the day.

Swede won't be great yet, it's slightly too early in the season / too mild for it, it's one of those veg (also sprouts and parsnips) that needs a frost before it is ready.
