Swede at Christmas

I'm the only one who loves swede and I want it at Christmas dinner, but not to do it on the day. Previously when I've cooked and frozen swede it's a bit watery. Any tips or advice? Could I be overcooking the swede or not draining it enough?

Does it get supersoft so that you barely have to mash it?

Do you remember that 70s ad for Smash when a load of metallic aliens laugh at humans for the way that they make mashed potato? I feel sure they are laughing at me now for all the labour I have put in over the years cooking swede the primitive way.

But, again, can you promise me it won't explode? I fear it might be like microwaving a hand grenade.

It doesn't explode! Shrivels up if over cooked but doesn't explode.
Just a big baked potato in theory, everyone microwaved them as a student!

I mash mine with carrot and just drain the veg well before mashing. I make it in advance and freeze it. The only other ingredients I include are salt, pepper and butter- an absolute metric fuckton of butter.

Wow. I'd expect it to explode!

OP I'd steam it, so it's cooked with no added water, mash it with a bit of butter, pepper and nutmeg and freeze it, then reheat on the stove top on the day if it looks watery or in microwave if it looks fine.

Another vote for the microwave. I also love swede and I suggest a couple of trial runs. It’s too delicious only to have at one meal

I cannot believe I’ve never heard of microwaving whole swede, what a game changer!

BTW I. now always use whole baked potatoes for making mash, keep the skins and freeze to airfryer as a side for other dishes.

Always have swede with Christmas dinner. Lots of butter and white pepper. I boil mine and then dry on a tea towel before mashing. Pop it in a dish and microwave on the day.

I put the swede in the microwave for about 16 mins(depending on size) then use either an egg or milk and mash it. Tastes really sweet.

I am cooking swede or turnip as I'd call it 50 yrs or so and indeed it can be a pain to prepare, now if you're cooking it in with bacon well then it has to be chopped up however hard.

I had never heard of the microwave method and I love it mashed so it was on special today in supermarket so I bought one and threw it into microwave, it took nearly 25 mins to be soft and I have scooped it out, mashed it with butter/salt/pepper and to honest I could eat the whole bowl of it! I'll do that again!

Thanks for the microwave method - will definitely give it a try. DH loves it and makes it for every roast dinner. We always add some nutmeg to it.

If it's 25 mins in the microwave you would be as well to chop it up and boil it. Butter, milk and black pepper.
