I feel like we haven't had one of these threads since the evenings have started getting lighter and the weather (hopefully) is getting warmer.

I am absolutely sick of choosing what we eat every single day of my life so everybody please tell me what you're having tonight and inspire me!

I'm going for 3 courses tonight (unusual for a weeknight but in-laws are coming) but still simple dishes:
Grilled asparagus with Parma ham,
Cottage pie with roasted celeriac, beetroot and swede,
Banana splits

A mixture of things - pizza, leftover chicken koftas, halloumi fries, any salady bits that need using up.

And a bottle of wine for me and dp :)

Just the kids and me tonight so we’re having homemade beef chow mein and egg fried rice with battered chicken and crispy duck pancakes (from asda)🤣

Chinese because were about to head out and will be back late. (Plus pay day yesterday helps!)

Had two fish fingers a while ago. They were delicious.

Usually eat all home made and healthy dinners so its a real treat.

Nigella's chicken and chorizo tray bake with potatoes, garlic, peppers, cherry tomatoes and red onion all in the same roasting tin. Plus green salad.

We didn't have the starters last night so griddled asparagus with Parma ham tonight followed by asparagus and pea risotto ( as that's on the meal plan) but if they rebel over the amount of asparagus I'll push the risotto to tomorrow and make carbonara tonight.

I made a vegetable lasagne this morning. I always forget how long it takes. I'm all for the short cuts in life, but I draw the line at things I'm going to eat. DS and I will probably double carb with some garlic bread on the side. DH will pretend to be virtuous, but will no doubt follow it up with pudding and a savoury (ie yoghurt and a bag of ready salted). There's enough lasagne for leftovers. There will be no leftovers.

@DahliaMacNamara I never make lasagna for exactly that reason - so much work and washing up for one dinner!! I am always amazed by people who suggest it on here as a weeknight dinner...maybe as something you've prepared and frozen but even then it takes an hour to bake.

Tonight we'll have slow roast salmon, spinach and potato gratin (M&S) and a green salad. Nice glass of white and feet up for the weekend!!

Steaks done on the bbq, sautéed potatoes,
green salad, asparagus and some bread on the side for dh who will mop up the sauce with it.
He’s cooking but I wish he’d get a move on, I want to watch the jungle in bed!

Ds (13) is making chicken khao soi tonight which means he had the idea and will take all the credit, and muggins here gets to do all the prep

My dim sum killed the thread before!

Tonight we're having Greek feta/spinach pie (frozen from Waitrose) with gigantes beans (jar), tsatski (made by me) and Greek salad (made by me). One of my favourite, very lazy meals.
