Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Morning all. Didn’t get chance to post last week.

M: Pan fried sea bass with a coconut curry sauce

@myrtleWilson I have just rustled through my fridge and realised while I have plenty of green veg, a few other bits, otherwise I'm light so your chickpea, tomato and spinach curry looks like a winner and I might try it! Thanks. I don't have mustard seeds though so will have to see if I can replace with something. Alternatively, you reminded me of a lovely simple chickpea and pepper curry I used to do often and that I do have recipe for. I think dinner tomorrow is sorted!

Tonight: DH and DS are having left over ready meals. DD and I PROBABLY having pork schnitzels of some sort.
Tomorrow: chickpea curry! Grin
Wednesday: Salmon with stir fried veg and noodles
Thursday: me and DD out. DH and DS having one of those posh Dell'Ugo pasta meal deals
Friday: something with aubergine. I liked the suggestion upthread about aubergine and mince. I had something similar in a hello fresh box once, might try find that recipe.

I just signed up to Jamie Oliver's budget batch cooking mail so might see if good ideas come out of that. I really am not inspired currently.

@SpaceOP I saved this aubergine recipe last week. It’s for a dip, but I thought it would be good in the pre mashed stage as a side dish to some marinated lamb leg steaks. I probably won’t bother peeling as I’m not mashing.

So far I'm not organised enough for a week but tonight is veggie chilli with rice (made enough for 3 meals and had the same last night).

Tomorrow - aubergine and tamarind curry from One Pot, Pan, Planet.

Definitely the sweet potato Mac and cheese a la @myrtleWilson and the squash curry, and the spinach tomato and chickpea curry. Thanks for doing the hard yards for me 🤣

Have just seen a marvellous auto carrot on my post - our Diana Henry chicken will be sprinkled with a picada rather than a cicada - no noisy insects on my dinner plate 😂

This week:
Mon sweet n sour pork with rice (using leftover pork from slow cooked joint - there's 1 more meal' worth sliced and frozen for another Chinese meal).
Tues lamb tagine (from freezer) and couscous
Wed pasta with garlic mussels in a cream/wine sayce (basically pack precooked mussels heated with dollop of cream chucked into fresh pasta).
Thurs prawn and veg stir fry with noodles
Fri probably takeaway
Sat hopefully I'll get some nice fish in the morning and do something interesting with that
Sun not a clue yet but Dh plans to make a chilli con carne soon so maybe that

tried cauliflower steaks and sweatheart cabbage steaks and i can confirm they were great. but when does roasting anything not make it better haha!?

Pleased to confirm I stuck to last week's plan 100%! Tomorrow is the slight exception - I had planned mushroom burgers but now been invited out to dinner. So, next week's plan - starting from Saturday - is:

Sat - Chicken thighs, chorizo, chickpeas and kale
Sun - lunch with friends so playing dinner by ear depending how hungry we are - probably sandwiches.
Mon - Sweet potato and mushroom curry
Tues - Soup and sausage roll
Wed - Soup and egg roll
Thurs - A sort of bastardised shakshuka with some of the leftover lamb/aubergine mix, from last saturday's dinner, stirred through.

Fri - Spag bol with leftover bolognese from this week's lasagne

I’ve done pretty badly this week I think…

Saturday/Sunday - leftovers from the party I imagine - yes on Saturday, on Sunday we ended up going to the pub for my mums actual birthday so had wine for dinner - oops!

Monday - Spanish Chicken Traybake - no - other nearby pub sent an offer for 50% off mains so we ended up having a date night out.
Tuesday - left over Spanish chicken (only me here) No - I had spiced chicken thighs and med veg in a pitta

Wednesday - beef keema curry - no had chicken thighs to use up so chicken and chorizo rice

Thursday- Thai pork lettuce cups - no left over chicken and chorizo rice

Friday - Maybe lamb stuffed aubergine! - no we’re having pork and peanut Thai curry

Saturday - sausage and chips for friends fussy kids - Cottage pie for the rest of us! - TBC, my friend has says she wants to cook with me like we used to at uni so we’re going to decide on the day

No food was wasted though so will make last weeks meal plan this weeks one!

Saturday DH and I are out to a Turkish restaurant yes
Sunday we’re all out for a roast so prob soup in the evening went out for pho so cooked a roast at home
Monday: Greek Briam yes with smoked tofu for DS and I and chicken drumsticks for DH and DD
Tuesday: Vietnamese lentils no - did the spanakorizo intended for Wednesday
Wednesday: Spanakorizo From Nistisima with roasted cauliflower for me and DS, roast chicken for DD and DH no, did an additional freezer surprise, salmon for DD and her friend, vegan Wellington for DS, DH and I, oven chips and broccoli
Thursday: freezer surprise yes, was plant cutlet for DS and I, chicken Kiev for DH and DD then roasted up the veg lying around in the fridge
Friday: doing an early Burns night and I think the menu will be pate’s with home made oatcakes (mushroom or smoked haddock), haggis, neeps and tatties towers with savoy cabbage and a whisky cream sauce, then might have a crack at this larderlove.com/flummery/ almost yes, have made oat scones to have with mushroom pate and potted salmon, haggis neeps and tattie towers with Brussel sprouts because the savoy cabbages looked a bit sad but with whisky sauce, have made cranachan cheesecake in place of the flummery and shortbread to have with coffee after

F - fennel and lemon risotto
S - veggie chilli from the freezer
S - sweet potato , ginger and coconut stew from last night with jacket potatoes and broccoli
M - aubergine parmigiana or aubergine lasagna depending on mood.
T - parsnip, leek and white bean crumble
W - potato pepper and broccoli frittata
T - probably leftovers from the above or I'll make soup to use up.

Sat - Sausage casserole

Here’s how I did this week, not great but managed to get some pasta bakes batch cooked and in the freezer.
I have now got into batch cooking and have built up a bit of stock in the freezer. I need to remember that I can defrost some of that food in the microwave in a pinch, rather than ordering a takeaway.
✅ Sunday: Quorn / Mushroom, asparagus and emmental parcels with potatoes and peas - @RemusLupinsBiggestGroupie I finally made these. DH accidentally threw the asparagus out so I just added Quorn chicken and mushrooms. They were really tasty but pretty big.
✅ Monday: Veggie pasta bake and garlic bread – Managed to make some extra for the freezer.
✅ Tuesday: Lasagne with salad and maybe garlic bread
❌ Wednesday: Veg, potato and halloumi peri-peri traybake – I ended up having to travel for work so we got a takeaway curry.
✅ Thursday: Lasagne (leftovers) with salad and maybe garlic bread
❌Friday: Quorn bacon and chicken lattice, roasted baby potatoes and veg – I got stuck on a work call so we decided to get another takeaway curry.
❌Saturday: Quorn, paneer and veg tikka masala (from the freezer) with brown basmati and quinoa, naan bread, poppadoms and Bombay potatoes. Forgot DH is away tonight so me and DD are going to have a takeaway (she didn’t have the takeaways earlier in the week!)

This is the plan for this week:

Sun: Halloumi, potato and broccoli peri-peri traybake
Mon: Quorn and veg enchiladas with brown rice and quinoa
Tue: Greens and Kimchi Rice from One Pot, Pan, Planet
Wed: Quorn and veg enchiladas with brown rice and quinoa
Thu: Boursin and Tomato Pasta with garlic bread
Fri: Quorn bacon and chicken lattice, carrots and chips or potatoes
Sat: Quorn lasagne from the freezer

SUN at a friend’s for lunch so prob lentil ragu for dinner
MON veggie lasagne
TUES salmon, rice and broccoli for the fam, soup for me on the train
WEDS going to do 4 different dishes from Nistisima: braised fennel, crushed beans and garlic, crushed coriander and olive potatoes, slow cooked peppers
THURS DS cooking his scallion oil noodles
FRI prob pizza night

2 week meal plan complete and shopping ordered for tomorrow.

Plan is

Today: cottage pie using last of the onion, celery and carrots. Root veg topping
M: Vietnamese pork with brown rice/ cauli rice (I'm low carb) and pak Choi
T: tray bake with chicken thighs, chorizo, new potatoes and peppers
W: keema madras and brown rice/cauli rice
Th: steak pie, chips for everyone else, buttered broccoli, peas and kale
F: homemade cod and parsley fish cakes with salad and tartare sauce
Sa: sweet chilli chicken noodle salad
Su: steak in ale, yorkshires, mashed celeriac, more buttered greens
M: chicken makhani with brown rice/cauli rice
T: smoked basa fillets, new potatoes, sugar snap peas and baby corn
W-F are speed teas as DD is in the school musical every night so a mix of jacket potatoes with various fillings, salad, soup, sausage sandwiches etc
Sa: chicken pizzas ( chicken breast butterflied and bashed out and then topped with passata or bbq sauce, cheese, salami etc)
