Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Tmrw - baked pots, cold meat and salad
tuesday - enchiladas
weds - cauliflower cheese, croquettes and glazed ham
thurs - teriyaki salmon noodles
fri - chicken thigh and veg curry and rice
sat - fish and chips (frozen haddock and homemade chips) in air frier with peas and grilled tomatoes
sun - roast beef

All home made including sauces apart from the breaded fish, croquettes and half a jar of Pattaks curry paste as find nothing beats it.

S - salmon/ vivera steak with lemon cous cous and sautéed garlic spinach.
M - colcannon, poached eggs and kimchi.
T - jacket spuds, chickpea curry, colslaw
W - pasta, spinach pesto, peas, asparagus, edamame, flaked almonds.
T - dhal, rice, turmeric roasted cauliflower
F - homemade pizza

ooh, so much inspiration there, thanks! no idea what I'm making yet, but it needs to involve a lot of vegetables as I have eaten my body weight in crisps, shortbread etc over last two weeks

M - roasted Mediterranean vegetable lasagne
Tu - sticky Asian tofu
W - Mediterranean chicken, rustic parmentier potatoes and tender stem broccoli
Th - hunters chicken pasta bake
F - 3 bean chilli
Sa - steak, chips, chimmichuri sauce, watercress, rocket and Parmesan salad
Su - meatballs and spaghetti

Meal planning is an obsession for me, it's like a full time hobby I have a love/hate relationship with.

I'm trying to loosely follow the Mediterranean diet and ultimately just wanting to up more veg and fruit intake.
I get into a rut with h serving the same side veg and same fruits I buy on rotate so want to expand on that and just eat more generally.

Today- Tuscan chicken, wholemeal rice, asparagus & brocolli
Mon - out, probably Wagamama's
Tues - nandos rub grilled chicken, wedges, salad
Wed - prawn Thai green curry, rice, stir fried veg, pak Choi
Thurs - feta, sun dried tomatoes, olives Cous Cous stuffed peppers, wilted spinach and asparagus

In light of the fact that I really really need to get my weight under control and DS could do with a little gentle slimming, I'm TRYING to get back into meal planning to avoid the inevitable, "oops, it's dinner time, right, quick bowl of pasta" habit! And as I have fussy DD who needs to eat separately at least half the time, it's also good for her otherwise we default to chicken nuggets or pasta pesto for her WAAAAY too often.

Tonight - Chargrilled veg and halloumi (in wraps/flat breads for DS/DH) (leftover spaghetti bolognaise for DD)
Tuesday: Salmon, steamed veg and rice (DD can have "posh" fish fingers instead of salmon)
Wednesday: Spaghetti and meatballs (I'll eat something else - tbd)
Thursday: Warm butternut spinach and walnut salad. (DD eats at her activity)
Friday: tacos (DD tbd)

@oneuponedown Yes, similar here. For a while we were eating a lot of interesting vegetarian meals or veggie dominated meals but it just got easier to revert to old standbys. I'm trying to get back into it a bit now. Chargrilled veg is something I will probably do fairly often as it's generally popular and I can jazz it up with all kinds of things. Lemon and honey and garlic in a wrap or tahini/yoghurt as a dressing for a side dish etc.

Going to use the One Pot, Pan, Planet by Anna Jones for menu planning. Bought for me as a Christmas present.

• saag aloo shepherds pie.
• preserved lemon and herb baked orzo
• halloumi, broccoli and chickpea bake
• quick squash lasagne
• carrot soup with tahini and rosemary
• cauliflower and ginger soup with cashews
• smoked paprika pasta bake.

I've got the ingredients in for all of these dishes, so will work my way through

I've recently reinstated our veg box delivery - we had it throughout lockdown into 2021 but for various reasons stopped. I noticed though once we stopped how I defaulted to a meat first setting too often and I wanted to reverse that (although post xmas meat to use up still in process!) and also the veg box made me seek out new recipes (I can be found sharing those on the weekly new recipe thread!)

This week, I have no fixed plans except that I'll do a chicken curry and Bombay potatoes tonight, with puppidums.

And a large spag Bol with loads of veggies another night (with spare for freezer meals next few weeks).

The fridge is almost empty, freezer depleted, and I need to do a big shop for fresh stuff - maybe tomorrow.

Monday: Veggie Cottage Pie with Root Veg Topping
Tuesday: Veg and Paneer Curry
Wednesday: Baked Spinach Ziti
Thursday: Courgette Fritters (not sure what I'm serving these with at the moment)
Friday: Quorn, Asparagus and Emmental parcels with roast potatoes

I've just downloaded the Anna Jones cookbook (its free with Kindle Unlimited) on the basis on the recipes mentioned here so looking forward to including some of those recipes next week.

Today: ravioli with a tomato sauce

Shopping tomorrow, then in no particular order:
frozen pizza w salad
roast chicken/veg tart, roast pots, cavolo nero, carrots
leftover roast chicken/tofu, stir fry veg, rice
curry ready meal/ leftover tofu w rice noodles and veg
lasagna ready meal w salad/pukka pie with all the steamed veg and gravy
freezer beef/bean chilli with rice
cauliflower cheese near a baked potato and peas

normally cook from scratch and manage the meat/vegan thing a lot better but I’m ill and everyone’s getting fed so there!

We’ve just had a bit of a disaster with the shed freezer being turned off unwittingly so now our meal plan is

M - peri peri chicken thighs, macho peas, roasted med veg and pitta
T - peri peri chicken thighs with potato wedges
W - Chicken thighs with ????
T - yet more chicken thighs in something
F - ANYTHING BUT CHICKEN THIGHS!

Luckily the freezer wasn’t too full but I recently bought two massive trays of chicken thighs from Costco and portioned them up to be organised - doh!
