No I was making it for DH and DC but I’m stretching to buying more for double the number of people! I was going to do the same recipe but tofu for me

Scirocco · 28/11/2023 19:19

Sunday - dahl with chicken and garlicky potatoes
Monday - sandwiches (had an indoor picnic and used up salad stuff that would otherwise go out of date)
Tuesday - flatbread veggie pizzas
Wednesday - lamb and green bean stew (from the freezer as already batch cooked)
Thursday - veggie biryani
Friday - probably more veggie biryani
Saturday - either out to a restaurant or curry from the freezer

Fivemoreminutes1 · 29/11/2023 09:41

Chilli and cornbread cobbler
Hasselback halloumi traybake and crusty bread
Roast cauliflower biryani
Puff pastry pizza
Spinach and ricotta pasta shells
Tofu peanut stir fry
Butternut parmigiana

Lastqueenofscotland2 · 30/11/2023 08:34

Saturday: at a friend’s Christmas do so party food
Sunday: baked beetroot falafel with flatbread, salad and some wedges
Monday: chipotle portobello tacos
Tuesday: drunken noodles
Wednesday: at another friends

I'm amazed we've kept this going all year. I've really enjoyed contributing to the thread as it's helped me focus my shopping and planning as well as getting inspiration from others and noticing patterns in our eating - both good and bad.

That said, the week ahead for me is a bit of a mishmash of desparately clearing freezer space and eating on the move, around various festive committments.

Tomorrow: Pork black bean stir fry
Saturday: Dinner with friends
Sunday: Sirloin steaks, potato wedges, mushrooms and green beans
Monday: Chicken escalopes with whatever veg is leftover
Tuesday: Mac and cheese
Wednesday: Work christmas party - there will be a buffet but based on previous years, it could be minimal. DH will have soup from freezer with cheese and crackers and I'll fill up on the latter if needed when I get home
Thursday: Christmas dinner out with my book group - Indian restaurant. I'll have a veggie option as all the stuff coming out the freezer is meat heavy.

Friday: DH's work christmas dinner. I haven't yet figured out what I can use from the freezer as a meal for one.
Saturday: BiL hosting a pre-christmas meal as not all of DH's family will be together on christmas day.

Yes it really helps me notice when we’re got lazy or slipped into bad habits! And keeps me motivated to keep a bit of variety.

Me too - have often been inspired by meals you’ve all posted and also it’s a handy place to keep where I’ve meal planned!

Spirini · 30/11/2023 16:37

Thank you for the thread @Lastqueenofscotland2 , I don't always contribute but I like to have a peek at what people are eating for inspiration.

It's actually been 2 years I think!? Didn't we first have one that Remus started, then we got a second one at the beginning of this year thanks to LastQueen.

I am attempting to practice/test some recipes ahead of Christmas. Tried slow cooker red cabbage - I like the concept, need to work on the flavour. It was awful!

Tonight, I'm testing a whole roasted cauliflower recipe and seeing if I can do it in the air fryer. Recipe looks a tiny bit bland which worries me, hence the pre-test, plus it's for an oven cooked version not air fryer. But will see.

Rest of the week is a combination of experimenting ahead of vegetarian house guests and finishing up what I have in the fridge (such as the insane amount of carrots, broccoli and baby corn due to an accidental double order from Amazon and the random single fillets of crumbed frozen fish!!)

Aubergine curry (Bhaji)
Chickpea and pepper curry (with aubergine to appease DS)
Mince of some sort. Maybe a stir fry in light of veggie issue above.
Crumbed fish fillets, with stir fry.

Citygirlrurallife · 04/12/2023 23:59

Longer if you count all the ones we did which would start fresh every week or so!

i think I’ll also test some Xmas week dishes this week:
Tuesday: miso roasted butternut squash with mashed butter beans and parsley pesto
Wednesday: Savoy cabbage and roast garlic gratin
Thursday: Spinach, tomato and walnut lasagne https://www.theguardian.com/food/2023/dec/02/vegan-lasagne-recipe-spinach-walnut-tomato-lasagne-meera-sodha
Friday: squash risotto that I didn’t do last week with tahini roasted cannellini beans

Meera Sodha’s vegan recipe for spinach, walnut and tomato lasagne | The new vegan

With layer upon layer of garlicky tomato and cream, and with a satisfying, crumbly topping, this hearty vegan centrepiece will steal the show

Lastqueenofscotland2 · 13/12/2023 13:06

Sorted mine for the next week, just running down the food we have before I go to stay with family for a week. I’ll start a new thread in the new year!

Wednesday: out at a Christmas do

Thursday: Deeply inauthentic Pho/ramen with all remaining contents of fridge as a topper

Hi planners!

thought I’d check in really and see how you all are, we’re mainly eating leftover but going away now for NYE with friends so a little bit of planning in the works for then - spaghetti bolognese and curry to fulfil all dietary requirements! And eating out for lunches

next week will be interesting with starting to plan properly again basing it on what we have in the freezer!

SnowAndIceLobelia · 28/12/2023 10:01

Hello! Merry Christmas!!

I need to get back to planning. Also leftovers here. But starting january I am trying to make a pledge to use up as much of the freezer and larder as I can and to limit buying any groceries (except for fresh fruit and veg).

Today - Piri piri chicken legs with chips and salad
Friday - slow roasted ham with vegetables
Saturday - Chicken, lemon and rice soup

That is as far as I have got!

SnowAndIceLobelia · 28/12/2023 10:04

Probably pea and ham soup in there somewhere after the slow roast ham!
