Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Working out my menu for next week. I picked up a pack of own-brand vegan mushroom burgers in Asda's yellow sticker section. At 62p I thought they were worth a try - we love mushrooms/mushroomy things.

Has anyone tried these? I'm currently trying to work out whether to have them as burgers, in buns with salad as the Asda gods intended, or roll into "meatballs" and turn into some kind of Asian-inspired dish (maybe ramen), or crumble into a veggie bolognaise.

My meal plan stopped at Tuesday and I have not yet done another so tonight was a bit of a 'hit the shops' approach.

Homemade cheeseburgers with brioche buns and vegetable sticks.

I like the idea of accountability for last's week's plan: This is how I did.

Thursday- 3-bean veggie chilli and flatbread - Yes
Friday - chicken and broccoli stir-fry with wholewheat noodles - Invited to friend's house unexpectedly.
Sat - will be out all day into evening so charcuterie, olives, cheese & oatcakes when we get home. - Yes
Sun - chicken thighs in saffron and lemon orzo - Yes
Mon - baked potato with l/o bean chilli and coleslaw No - had the broccoli noodles from Friday
Tues - carrot and lentil soup - sausage rolls Sort of - soup made as planned but given a bag of plums from friend at the weekend so made plum crumble rather than the rolls
Wed- carrot and lentil soup with egg rolls as above
Thurs - pasta with tomato and veg sauce this is today and no, I'm making more 3 bean chilli instead

And now for the week ahead (I've discarded the 10 day plan already)

Tomorrow (Fri) - chorizo and broccoli stalk pasta
Sat - lamb mince stuffed aubergine with patatas bravas
Sun - lasagne and salad
Mon - l/o lasagne
Tues - Baked potato w/ l/e 3 bean chilli
Wed - red thai curry noodles with chicken and veg
Thurs - tagliatelle, kale and walnuts
Fri - something with the aforementioned mushroom burgers.

I’ve done quite well this week!

Tonight - Thai pork mince in lettuce cups - yes was delicious - should make it more
Friday - Chilli - yes
Saturday - Salmon and veg for DP (I’m out) - he had a kebab
Sunday - Leftover chilli - no saved it for my sister and I to have for lunch on Monday before we went out. DP made Boursin Chicken and new potatoes instead!
Monday - Salmon and veg for DP (I’m out and he’s not very imaginative!) - yes

Tuesday - Teriyaki Beef Noodles - yes

Wednesday - Gammon, Egg, AF chips and beans - yes

Thursday - Bang Bang Chicken lettuce wraps - this is today - all ready to go later

Friday - Ribs and Wings with fully loaded JP’s - no - we’re now hosting 20 for my mum’s birthday so doing chilli, pulled pork and succotash, my brother is doing fajita chicken, other brother is doing spicy rice and guacamole and sister is bringing chips and dips and pudding!

This week

Saturday/Sunday - leftovers from the party I imagine
Monday - Spanish Chicken Traybake
Tuesday - left over Spanish chicken (only me here)
Wednesday - beef keema curry
Thursday- Thai pork lettuce cups
Friday - Maybe lamb stuffed aubergine!
Saturday - sausage and chips for friends fussy kids - Cottage pie for the rest of us!

Could anyone recommend me a daal recipe? One that's popular with children!

M: slow cooked honey & garlic chicken ✅ but I didn't rate this that much; not enough sauce
Tue: veg pasta ❌ (pasta but DP was not aware of the meal plan so did salmon with it)
Wed: chicken salad ✅
Thu: salmon sweetcorn roasted veg ❌ - no idea what we'll have as salmon has been eaten

Fri: daal and naan
Saturday: homemade pizza and salad
Sunday: roast chicken
Mon: fajitas - maybe veg, maybe left over chicken

not that exciting this week, had a really expensive start to the month as my roof decided to not be waterproof so on the cheaper side.

So last week:

  • Greek stuffed green peppers - yes! Had this on Tuesday and went down well, though the rice took forever to cook in the peppers so will def prep before next time
  • Soul soothing African Peanut Stew - yes, family favourite and for the first time DD ate it!
  • gonna do that Lentil and Mushroom hotpot @Fivemoreminutes1 posted - yes, huge success and had tons left so popped it in the freezer and will turn into Ragu this week I reckon
  • golden beetroot borscht with cabbage - yes, not great, used too much beetroot, was sickly sweet

Saturday DH and I are out to a Turkish restaurant, Sunday we’re all out for a roast so prob soup in the evening

Monday: Greek Briam
Tuesday: Vietnamese lentils Here
Wednesday: Spanakorizo From Nistisima with roasted cauliflower for me and DS, roast chicken for DD and DH
Thursday: freezer surprise
Friday: doing an early Burns night and I think the menu will be pate’s with home made oatcakes (mushroom or smoked haddock), haggis, neeps and tatties towers with savoy cabbage and a whisky cream sauce, then might have a crack at this larderlove.com/flummery/

I only managed 3 of the recipes (always add a couple extra each week for choice, and accept life will get in the way 🙃, but all three I cooked were lovely

Aubergine dhansak - dry, spicy, great depth of flavour
Mushroom tikka masala - creamier and less spicy but absolutely delicious and made enough for two nights.
Samosa tarts - our favourite of the three and is going to be a staple as it's so easy to make and uses up any veg you have hanging about. I added fresh coriander as it needed using but that was it. It made enough for 4 adults.

Yesterday: jacket potatoes with tuna mayo and salad
Today: partner and DD having satay chicken with chips and veg as I'm out
Tomorrow: meatballs in tomato sauce and pasta
Monday: Moroccan spiced salmon with rice and roasted veg
Tuesday: chilli con carne with rice, avocado and sour cream
Wed: slow cooker night- herby chicken stew and dumplings
Thursday- I'm working so partner will do veggie omelette for him and dd

So - last week's plan v actual:

Pork in mustard sauce ✅
Feta, leek, spring onion pie ✅
Sweet potato & black bean enchiladas - ✅ -well almost! Made S/p & black bean chilli & had with rice instead
Squash & cavolo nero pasta ✅
Cardamom chicken & rice ✅ Served with roast cauli & flatbread instead of rice
Ginger & soy salmon, stir fried veg ❌ having this on Sunday instead as DS made burgers
Aloo gobi, dhal ❌ going to friends tonight instead
Beef stew & parsnip dumplings now pushed to next Sunday

Soup for weekday lunches (carrot & coriander & going to try the moroccan detox soup that's been posted on here) ✅ have a vat of soup in the fridge!

Next couple of weeks plan:

S Salmon as above
M Mushroom stroganoff
T Pasta bake (leftover pasta, mushrooms & salmon from above)

Here's how I did this week:

✅ Sunday: Quorn, veg and Paneer tikka masala with bombay potatoes, poppadoms, rice and naan
✅ Monday: Shepherd’s pie (filling from the freezer and ready made mash)
✅ Tuesday: Broccoli, mushroom, potato and halloumi peri-peri tray-bake
✅ Wednesday: Shepherd’s pie (leftovers from Monday)
❌ Thursday: Veg and sun-dried tomato pasta with garlic bread - I ended up cooking the pasta bake I had in the freezer
✅ Friday: Sweetcorn fritters with chips and beans - we had these with cheese, guacamole and cauliflower hash browns but I'm counting this as a win.
❌ Saturday: Mushroom, asparagus and emmental parcels with potatoes and peas - I forgot we were visiting family so we got a takeaway curry when we got home.

This week, I need an easy week as I'm travelling for work one day and I haven't had chance to do any cooking this weekend for the week ahead, so it's a bit samey and unadventurous:

  • Sunday: Quorn / Mushroom, asparagus and emmental parcels with potatoes and peas (really this time!)
  • Monday: Veggie pasta bake and garlic bread
  • Tuesday: Lasagne with salad and maybe garlic bread
  • Wednesday: Veg, potato and halloumi peri-peri traybake
  • Thursday: Lasagne (leftovers) with salad and maybe garlic bread
  • Friday: Quorn bacon and chicken lattice, roasted baby potatoes and veg
  • Saturday: Quorn, paneer and veg tikka masala (from the freezer) with brown basmati and quinoa, naan bread, poppadoms and Bombay potatoes.

Tuesday Marcella Hazan tomato sauce and pasta - Yes, delicious as always
Wednesday spinach, tomato, chickpea curry (meera sodha) - changed this to Rachel Roddy's courgette, almond and breadcrumbs pasta - perennial fave
Thursday smoked tofu, mushroom keema (meera sodha) - Yes - fab as ever
Friday cookhouse stew (on insta from local NE restaurant) Yes!
Saturday Sri Lankan style squash curry (Ed Smith - Crave)This became Nigella's sweet potato macaroni and cheese for 4
Sunday left over Nigella's Mac n cheese for 2

Pleased at how aside from the chorizo in Friday's dinner we ate vegetarian.
