I've been a mix of convenience and trying to do things in a not very well equipped kitchen without a lot of ingredients recently.

This week:
Sat: steak and chips and mushroom sauce (restaurant)
Sun: chicken tikka masala (definitely missing something though)
Mon: lemon chicken, roast baby potatoes and med veg
Tues: pesto Rossa pasta with bacon bits and mushrooms
We'd: breadsticks and hummus
Thursday: Parmesan risotto (from a packet)

My plan for the next few days:
Today: roast chicken drumstick, med veg, roast baby potatoes

Sat: salmon, broccoli and mash (found a fish shop this morning)
Sun: poss a spaghetti Bol (cook enough sauce to freeze 1/2 portions)
Mon: chicken tikka masala and rice (leftovers I froze)
Tuesday: lemon chicken (f) with a med veg (frozen leftovers) couscous
We'd: eat out? Or pasta carbonara?

HalloumiFries · 17/11/2023 14:50

Monday - veggie chilli
Tuesday - chicken escalopes, potato wedges, leeks and peas
Wednesday - aubergine curry
Thursday - baked feta pasta
Not sure after that

OffTheWalll · 18/11/2023 08:28

Thai fish cakes, peanut noodle salad
Leftover roast beef for Sunday lunch. I have leftovers in the freezer to do a full dinner.
Bobotie
Cod and chorizo stew
Pesto pasta with chicken
Roasted wedges of cabbage with butter bean, harissa, preserved lemons and tomatoes.

Citygirlrurallife · 18/11/2023 12:10

Sunday: out for a roast
Monday: burgers and wedges
Tuesday: kimchi fried rice
Wednesday: tofu mole
Thursday: salmon, chips and peas
Friday: pizza night

SpaceOP · 20/11/2023 10:10

This is why I love this thread. @HalloumiFries your meal plan reminded me we haven't had chickpea and pepper curry for a while and it's now on my list!

Tonight: Aubergine, tomato, chilli and chorizo pasta
Tomorrow: post roast chicken (we did this from Jamie Oliver's new recipe last week and it was very good and very easy so I see it as a regular. Takes quite a long time to cook so do have to think about making it on days when I can do prep work earlier in the day then just shove in the oven).
Wednesday: Chicken ala king
Thursday: Cream cheese and tuna jacket potatoes with salad
Friday: Pepper and chickpea curry.

Scirocco · 20/11/2023 15:55

Tonight - Jamaican jerk chicken
Tuesday - vegetable soup
Wednesday - paneer and vegetable korma
Thursday - sausages and sweet potato mash
Friday - something from the freezer (prepped options include veg curry, chilli, lamb curry)
Saturday - fish and vegetable pie with potato topping
Sunday - Lebanese takeout

Nothing fancy but easy and quick and with a reason chance of some of it being eaten by DC.

Lastqueenofscotland2 · 23/11/2023 08:50

Friday: beetroot and goats cheese risotto
Saturday: lemon asparagus pasta
Sunday: cauliflower cheese and roasties

Tomorrow - stuffed butternut

HalloumiFries · 23/11/2023 10:10

This week has been a complete disaster wrt meal planning.

Monday - veggie chilli ❌Carrot soup and a sausage roll
Tuesday - chicken escalopes, potato wedges, leeks and peas ❌Veggie chilli
Wednesday - aubergine curry ❌ Baked potato with egg mayo
Thursday - baked feta pasta ❌ Leek, pea and feta orzotto

Let's hope I can stick to this plan:

Tomorrow: Salt and chilli broccoli with rice
Sat: Out for DBro's birthday
Sun: Sirloin steak, potato wedges, mushrooms and green beans
Monday: Pasta with tomato and mushroom sauce
Tuesday & wednesday: Veggie soup, apple and bramble crumble
Thursday: Something with haggis for St Andrews Night
Friday: Some kind of veggie curry - probably sweet potato and pepper.

myrtleWilson · 24/11/2023 21:10

@Fivemoreminutes1 please could you share your vegetarian gumbo recipe/approach?

This week we are intending to have....

Sunday - ottolenghi braised eggs, lamb, sumac, tahini
Monday - oyster mushrooms, polenta, tomato chipotle sauce from Mezcla
Tuesday - glamorgan sausages and mash with gravy -never made before so recipe directions welcome!
Wednesday mapo tofu - Fuschia Dunlop
Thursday - vegetarian shepherds pie
Friday - midnight linguine
Saturday - meera sodha celeriac - from the Guardian food article about food/film - I made this a couple of weeks ago for the first time on the "new recipe" thread and it was delicious..

Citygirlrurallife · 25/11/2023 16:38

Last week was all a bit of a muddle and totally forgot we were hosting a massive fauxgiving on Friday night! This weekend is all birthday parties (kids and grown ups) and leftovers from Friday.

just saw this week’s guardian column from ottelenghi so I think I might do all of them!! https://www.theguardian.com/food/2023/nov/25/braised-tofu-sea-bass-tofu-cabbage-poppy-pasta-yotam-ottolenghi-weeknight-meals-recipes

Monday: DH sorting (I’m out with my mum)
Tuesday: Braised Tofu
Wednesday: cabbage and poppy seed pasta
Thursday: got some IKEA meat and not-meat balls in the freezer so them with chips and green beans
Friday: the ottelenghi sea bass above

Braised tofu, sea bass and pasta: Yotam Ottolenghi’s recipes for weeknight meals

Persian-style braised tofu with sour yoghurt and spinach, a pleasingly simple cabbage and poppy seed pasta, and steamed fish with cumin and tomato oil

BiddyPop · 26/11/2023 11:06

I had a fairly boring week - lots of repetition of past few weeks
Risotto from a packet (still had to cook but only added water)
Gorgonzola pasta
Pasta meal in restaurant
Fried chicken with roasted veggie couscous
McDonald's
Feta chick, roast pots, roast toms

Tonight I am out again for work and a tough day tomorrow so spag Bol from freezer
Tuesday probably a creamy mushroom pasta dish
Wed chicken - could be with pasta or rice as have both Tom & ricotta and sweet'n'sour sauces in jars)
Thursday lamb chops, french beans, smash
Fri poss another spaghetti Bol or lemon chicken or pesto rossa pasta with bacon

Have very limited pantry here for another 3 weeks but hopefully then get permanent apartment (for my 3 year stint) and my truck with a few boxes of ingredients included will arrive. But no point in going overboard in temp accommodation.

Pinchaperfect · 26/11/2023 12:07

Breakfast for dinner - scrambled tofu, mushrooms, tomtaoes, hash browns, vegan sausages and v bacon.

Vegan chicken stew and dumplings with mustard mash.

Happiee shrimp with sweet and sour stir fry veg and rice.

Mushrooms and vegan meatballs in bbq sauce with green beans and sweet potato mash.

Lentil spag bol.

Veggy tofu quiche. corn on the cob and new potatoes.

Baked spuds with vegan chillie and cheese.

Citygirlrurallife · 26/11/2023 19:28

DS now has 4 friends coming for dinner on Friday so sea bass will stay in the freezer another week and it’s risotto on Friday. Was going to do butternut squash and sage but any ideas to add vegan protein so the teenagers aren’t STARVING afterwards? Just cook some red lentils in maybe?

SpaceOP · 27/11/2023 09:44

We didn't do the chickpea/pepper curry as spontaneously went out, so this week, in no particular order:

Something with leftover chicken. I'm not inspired, but it must be eaten after Sunday roast. Maybe a Thai style curry tomorrow.
Pork schnitzel, cheese sauce, wedges and greens
Chickpea/pepper curry
Sage, pork and butternut risotto
Crumbed lemon sole fillets (ready made) with veg and potatoes

I assume it's vegan due to one of the teenagers? I'd add cannellini or butter beans myself - from a can so could add right at the end. They have a nice creamy texture too so go well with risotto.

For non vegans, perhaps also top with cheese or feta?

Citygirlrurallife · 27/11/2023 13:43

@SpaceOP because of me - I’m not cooking different food for everyone 😉 yeah I was considering white beans….

SpaceOP · 27/11/2023 13:54

Sorry, I just assumed it was because of the teenagers as you'd originally planned fish so not vegan! Grin

A friend always puts white beans in her paella and it is surprisingly good. Works well with the rice. I'd definitely go with that.
