Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

We did a rotisserie chicken with hasselback potatoes and roasted tomatoes and peppers on Friday.

Saturday was salmon burgers with leftover boiled potatoes from Thurs tossed in oil and made into almost chips in the air fryer.

Last night was a chicken and mushroom risotto, finishing off most of the chicken (enough left for a final sandwich today).

Pork chops tonight (I'll probably roast them as oven will be on) with garlic/lemon pepper roasted baby potatoes and cauliflower cheese.

Tomorrow I am thinking about spag Bol or prawns in a jar of curry sauce - or maybe a proper stir fry with prawns or chicken or roast pork (all from freezer).

Wed-Fri DH is fending for himself, there are plenty of easy options in freezer but I am guessing local chipper, ready meal from local deli, and takeaway that dd wants to get for the 3 nights 🤣

we'evhad a couple of hello fresh boxes recently. I won't be keeping them but it's been really interesting because they've helped me to realise that I've slipped back into too many nights where meals are way too carbs/protein focused. We always have vegetables but I'd say at least half the time they're there as an extra and for extra nutrition, rather than a core part of the meal. Even things like my asian-style mince and vegetables has become mostly mince, with just a few veg.

Does anyone else have this issue? I'm definitely going to be thinking about this when I do the shopping tonight.

lol no @SpaceOP cos I’m vegan so mainly eat veggies and tofu - but the rest of my family are not and when a meal has meat in it it def is still star of the show (especially because DD is fussy and needs everything deconstructed)

Tonight: out at a friend’s birthday party
Sunday: veggie and chickpea tagine with jeweller couscous
Monday: tomato, potato and aubergine curry and naan
Tuesday: coconut rice with Asian roasted broccoli, fennel and tofu
Wednesday: Butter Bean Stew and bulgar wheat
Thursday: mudjahara

dunno for Friday, probably pizza

Tonight is duck with some kind of veg and roast potatoes

Tomorrow chicken thighs with feta and thyme, with roasted tomatoes and either pasta or roasties

Mussels and pasta either Mon or Tues, and lamb chops the other night.

I'll worry about Wednesday later in the week - but probably a prawn stir fry type thing

Last night was a lamb and veg curry

Friday was orzo pasta with tomatoes and green veg

Thursday and Wednesday were veg stew (batch cooked)

Tuesday was Jamaican style jerk chicken

Monday was meant to be macaroni cheese but ended up being pizza as I was working late unexpectedly.

Got back from holiday last night so just limping through until I can do my big Friday shop

tonight: Jambalaya
tomorrow: noodles with peanut sauce and stir fried veg
Wednesday: at a sports social event where there is food
Thursday: lentil sloppy joes

We ended up doing the lamb chops with baby toad toes, roasted tomatoes and roasted med veg on Sunday when I had prep time.

Leftover med veg went with meatballs and pasta in a tomato sauce on Monday.

Feta chick with roasted peppers and roasted baby pots on Tues.

Exhaustion kicked in for both DH and I last night so chicken and chips from chipper.

Leftover chicken and chips for 1, with leftover Mon pasta for the other tonight.

But leftover roasted tomatoes have been whizzed up to make a tomato sauce that will go with the mussels and pasta tomorrow for an easy dinner.

I have covid and am unable to plan more than a day or two in advance at the moment.

tonight we had beetroot and bean burgers with roast potatoes (supposed to also have broccoli but the one I got in the oddbox was harbouring creepy crawlies)

tomorrow we’ll take the dog for a walk on the beach and pick up fish and chips (will send covid negative DC to collect)

Monday I think I’ll do the quinoa, kale and chickpea salad from Oh She Glows

literally no idea after that at the moment

I'm already half way through most recent meal plan, but not been on here. Quite keen to try and get through to the end of the week with little or no extra shopping g- maybe just a few extra veggies. So...

Tonight: salmon with fried rice and veg.
Tomorrow: Aubergine and pea curry - new recipe I'm trying out.
Wednesday: Jacket potatoes with tuna and cream cheese and salad
Thursday: Just me and DS so something with mushrooms - probably pasta. I'll add whatever I can find in fridge/freezer- I think there's some bacon tucked away somewhere.

Friday: Figure out what's left in the freezer and take from there! Grin. I did get some lovely stewing lamb on sale on the weekend so maybe a lamb stew if it's not as warm and muggy as it is currently.

V impressive! My fridge isn't big enough but if I can limit the in between shop to just a few veggies and more milk/bread, I will be very happy! I do have quite a lot of meat in the freezer so that's something.

my fridge is tiny too - a really crappy built in thing. Was def relying on tins and store cupboard items by the weekend.

I did a shop on Saturday though and then DH immediately went again yesterday and because I haven't done a proper full week meal plan I imagine ti won't happen again this week

Not updated here for a while as we've been away.

Had friends round yesterday for a buffet and have lots of cheese and pate left over so have a vegetable soup in the slow cooker at the moment and will have this for the next two nights, with those picky bits afterwards.

Then,

Wednesday: Baked potatoes with egg mayo
Thursday - spicy sausage and tomato pasta
Friday - veggie enchiladas
Saturday - friends' house for dinner.

Better meal planning to start next week.

Hi all, I like to dip in and out of this thread for inspiration.

Here's my meal plan contribution for this week:
Sunday: Pot roast with, yorkies, mash, cauliflower cheese and roasted carrots
Monday: Pasta arrabiata
Tuesday: Homemade chicken curry
Wednesday: Pasta pecorino with pistachios (ottolenghi)
Thursday: Chicken escalope, breaded in parm, lemon rind and thyme, roasted baby potatoes and steamed broccoli
Friday: Something easy, looking for inspiration here!

Well I tried the Gusto box at 60% off last week and froze the 4 meals to use throughout the week. Actually quite a faffy thing to do some of the recipes and quite a horror at all the tiny packets and pots.
However for new ideas it was good and might do it once a month.
Thursday - Malaysian chicken curry, rice and pickled cucumber relish
Friday -Pizza
Sat- Homemade cheeseburger with rosemary salted fries
Sun- Mutton slow cooked stew, cabbage and mash
Mon- Cheese and ham panini and salad
Tue- Sausage or Steak and ale pie, lattice fries and veg
Wed- Thai Pork thing and rice

This week so far:

Sat: BBQ steak and potato gratin, garlicy mushrooms
Sun: HM burgers (prob last bbq of season) and salad
Mon: chicken tagine with Moroccan style couscous (chuck veg stock powder, ground cumin, chopped coriander and handful raisins in when adding water).
Tues: Butter chicken with basmati rice
Tonight I have a work function to go to and tomorrow will be burger in the airport if I'm lucky
