Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Can I join in? My meal plans are generally based around what comes in our veg box. I am trying to be a bit more realistic about what I will feel bothered to cook during the week...

Tonight - lamb chops/halloumi, roast potatoes, tenderstem broccoli, roast golden beetroot, peas. Rhubarb crumble.

Mon - Green bean, pesto, potato linguine

Tues - Masala roast carrots with coconut red lentils

Weds - Caramelised onion and goats cheese tart, salad

Thurs - Lebanese spinach & chickpeas with preserved lemon & maftoul

Friday - Golden beetroot (and butternut?) risotto.

DH travelled solo to DMIL so I did roasted chick thighs with breadcrumbed courgettes on Friday, and the rest of the thighs with cauli cheese and baby roast potatoes on Saturday.

Sunday I did macaroni with cherry tomatoes and mozzarella, and have the leftovers for todays lunch.

Last night we had lamb chops, cauli cheese and my garlicy diced potatoes.

Tonight it's the rest of the batch of potatoes with a pie (we have both a chicken and broccoli bake or steak pie to choose from). Probably served with wilted spinach.

The other pie is for tomorrow, with croquette potatoes from freezer and some kind of veg.

Thursday DH fends for himself as I have a work bbq followed by yoga class...
interesting lineup!

Tomorrow- chilli con carne
Sunday - roast chicken thigh traybake with peppers, cherry tomatoes and pesto.
Monday - pesto pasta with mushrooms
Tuesday- mushroom stroganoff.

Can you tell I'm using up stuff from fridge?

Wednesday onwards - 2 weeks in Spain.

Didn't do too badly last week, though we went out to eat last night after Barbie instead of cooking, and Wednesday's tea took forever!

This week's plan
Sat - Toad in the hole, new potatoes, broccoli, green beans, carrots.
Sun - Spaghetti bolognese/lentil ragu. Maybe an apricot and raspberry clafoutis
Mon - cabbage nasi goreng
Tue (evening picnic) - tomato and poppyseed tart, little shop bought sausage rolls, kohlrabi slaw, potato salad. Maybe courgette soup? I have the day off.
Weds - Squash and spinach curry from The Green Roasting Tin
Thurs - Niçoise salad
Fri - Suspiciously delicious cabbage with pasta

Still have loads of courgettes and lettuce to get through though 😭

I am back in the planning game as a house move is on the cards and need to empty the cupboards/freezer.

meals to take us through to the Tues night shop:
Courgette and mushroom omlette, baked beans, vegetable nuggets and roasted tomato
Sausage rolls, mash, leftover baked beans, sugersnaps
Bengal style Dal from the freezer, rice
Homemade Cornish pasty with fake steak chunks, steamed cauliflower.
Noodles with cashews, (tinned) mushrooms & baby corn, peas
Greek butter beans in tomato sauce, roasted spiced cauliflower, pickled salad veg, flatbread

@DilkushaKitchen I think I have the green roasting tin on my kindle and I have some squash that needs using and a freezer full of spinach so thanks - that's an idea for this week!

I made a big batch of bolognaise tonight with the plan to turn some into lasagna. I just haven't decided whether to do individual portions for the freezer or make it tomorrow's supper!

Roasted cherry tomatoes with chorizo and mozzarella on pasta.

I haven't got beyond that - have been unwell this week and so no meal planning or shopping. Didn't even have the energy to do a list for dh to fo while ds is at his activity. But am feeling like a roast lamb and then leftover roast lamb sticky salad ala Jamie Oliver. So maybe that on weekend.

I made it tonight for the first time, I added a tin of chickpeas and I'm glad I did, gave it a bit more texture and added some protein, very tasty!

The past week was somewhat better than usual in terms of proper cooking - but not entirely.

Sat - salmon, broccoli, mash, hollandaise.

Sun- a made-up egg-fried rice dish with lots of veg bits from fridge and a leftover piece of salmon flaked in, seasoned with soy sauce, quite tasty

Mon- sausages (I pulled the meat out of skins and made mini-meatballs) and a couple of sliced chorizo sausages fried with an onion, garlic, peppers and tossed into pasta with a tomato sauce and a pantefolla garlicy bread on the side

Tues- I just had soup as DH had dinner with clients at lunch

Wed- butter chicken with basmati and puppadoms

Thurs- pasta bake from freezer

Fri-roast lamb, roast potatoes, Mediterranean veggies

Sat (today) I have steaks and weather looks decent enough for bbq 🤞

Sun- DH intends making a chilli from scratch 👍

Mon - DH is away so probably Welsh rarebit and part baked bread rolls

Tues - DH still away so probably something like lemon pasta or breadcrumbed courgettes

Wed - DH home for late dinner - likely chicken and a jar of curry sauce

Thurs - beef lasagna from freezer

Fri - I'll be off work so something a bit less convenience and needing more prep/cooking time...

Those roast carrots look delicious.

I've been away this week, so food has involved Greek, bar, noodles and afternoon tea.

Tonight I'm feeling the need for vegetables - dp has got some courgettes from the garden and I'm going to make a courgette and feta quiche. Will eat with Greek-style lemon and oregano roast potato wedges, pus salad. Berries and yoghurt for pud.

Tomorrow we're out for Sunday lunch.

Monday will be the remainder of today's salad stuff, with something to be decided. Not sure beyond that.

Always glad to get menu plan and food shop out of the way on Saturday.

Today we had bean and herb pasta with some Wensleydale for lunch, and sweetcorn fritters then chicken Thai green curry for tea as it was only meat eaters in.

For the rest of the week:

Sunday - sort of a hash with black kale and chorizo and/or fried egg

Monday - Dal with beetroot tops, maybe courgette and chickpeas if last week's courgettes are still edible

Tuesday - Sausages, new potatoes, French beans, carrots and the suspiciously delicious cabbage we didn't make on Friday

Wednesday - Roasted beetroot with yoghurt and preserved lemon, hot smoked salmon and/or ready cooked lentils, salad, potato salad

Thursday - Macaroni cheese

Friday - potato and anchovy white pizza. Or a takeaway, see how we feel...

It was nice. I just lightly fried diced courgette and onion. Mixed with diced feta and eggs for the quiche filling. A bit of mint would’ve been good in it, but I didn’t have any.

@DilkushaKitchen Turns out I don't have that one but the original book - have been paging through though and am feeling like I have not spent enough time trying these recipes. Any chance you can send the butternut/spinach recipe?

Last week's "plan" and reality were not even vaguely in line. Sigh.

This week is also fluid but I think:
Tonight: courgettes fried with olive oil, garlic, chilli and lemon and served on spaghetti with feta cheese (after a trip to the PYO farm!)
Tomorrow: Roasted tomatoes with chorizo which I didn't actually do last week.
Wednesday:I am out for dinner so might do the rest of them either some chicken pieces of a spaghetti bolognaise.
Thursday: DH and DD are out and I'm having lunch with a client so it's a ready meal for DS!
Friday: we're off for the weekend with friends so TBC.

Tomorrow nights online shop is done so the next weeks look like:
Bengal Dal /garlic chicken thigh with rice
Battered fishless fish /leftover chicken, homemade wedges, salad
Roasted veg pasta bake with lurking beans
Lentil cottage pie with green beans / DH make a batch of chicken curry
Tofu / egg fried rice and veg
Veggie/beef mince and onions, roast potatoes, carrots and broccoli
Jacket potatoes with bean /beef chilli

A lot of batch cooked stuff from the freezer but we might all eat similar things at the same time for a change.

Just written up my plan having given my magnetic week planner a nice clean at work

Tonight - shop bought pies, new potatoes, green beans, carrots, still got cabbage needing to be used up! Might make an apple and blackberry crumble for after karate tomorrow too.

Monday - Rigatoni with cavolo nero and extra virgin olive oil

Tuesday - Tofu stir fry with broccoli, sugar snaps, carrot, noodles

Wednesday - Couscous, cherry tomato and herb salad (Ottolenghi Simple, hope it is!), roast chicken thighs/halloumi

Thursday - Shrek pasta (pasta, pesto, broccoli, splash of cream, possibly some ham and cherry tomatoes if we're not sick of them)

Friday - pizza, maybe another Ottolenghi Simple one - Pizza bianca with potato, anchovy and sage, but I also have a tin of Mutti pizza sauce that was on offer...

Thursday ended up being the Welsh rarebit in the end.

Friday we had salmon en croute with potato gratin.

Last night we got a seafood snack box at the local van by the sea (small fish n chips, scampi, and squid rings).

Tonight will be lamb chops and some French beans.

I'm not cooking again until Thursday night, so I'll figure that out later in the week.

Wednesday - sweet potato or butternut squash dhal (might use the squash in a tagine later in the week
Thursday - garlic and tomato bucatini.
