Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Tonight was spag bol
Tomorrow- fish & chips (not from chippy - breaded plaice fillets with wedges, peas and broccoli)
Tuesday - pasta with sundried tomatoes and chorizo
Wednesday- veggie fajitas
Thurs - chicken, broccoli, blackbean noodles.

There's a possibility that we could be out with friends on Tuesday so leaving a day free for everything to shuffle up. If not, we'll have a freezer surprise on one of the days.

Then
Sat - Lasagne
Sun - veggie friends coming over so will have a selection of curries - dahl, aubergine curry, spinach and paneer, with various sides Inc gunpowder potatoes, rice and naan.
Mon - leftover curry (will deliberately make too much so it will do for longer)
Tuesday - leftover lasagne (there's a theme..)
Wednesday.- out for my birthday! Tapas!

Not sure beyond that.

Open a tin of tuna in oil. Drain oil into a pan. (You need some oil anyway and this one has already got extra flavour).

Heat oil, gently sweat a chopped onion until golden, add a clove of garlic (crushed or sliced) when nearing golden.

Add handfuls of suitable veggies a la stir fry method, I usually use up lots of bits from veg drawer and peppers need far less time than sliced carrots etc. But it's usually stiff like sliced or baton carrots, chunks of peppers, broccoli and/or cauliflower florets, sliced courgettes, French beans (halved), mange tout, frozen petite pois, etc. Veg always include half a small tin of sweetcorn.

Then protein - the tuna from tin, handful of prawns (I usually have a bag of frozen ones), could add chicken if you want (we don't).

Add about 3 tablespoons of mild curry powder and stir, then some already cooked rice (leftovers which have been properly chilled and stored work very well). Stir thoroughly to mix everything, check seasoning and add salt or more curry if needed. Allow to cook through long enough for everything to be cooked and piping hot. (Could serve with a fried egg on top - another thing we've had when out but I don't do at home).

Sat: Out for tapas and wine Smile. Cheesy veggie pasta bake for dc
Sun: Mediterranean salmon, garlicky potato salad & greens
Mon: Caramelised onion, brie & apple tart, salad
Tues: Red Thai prawn curry, rice
Wed: Spicy stuffed peppers, salad

Leaving Thursday & Friday up to the dc as they’re on school holidays. We’ll see how that goes…

Inspiration is LOW this week. But my freezer was completely stuffed and I still felt we had nothing in it to eat Grin so I did a clear out and reorg and am committed to some version of the following:

Something with bacon tonight to use up the open packet - probably a tomato based bacon pasta dish.

Roast chicken and then chicken left overs in some way the following day.

Chicken/steak stir fry to use up random small amounts of chicken breast/steak in freezer. I could do Fajitas too I guess?

Something with sausages as apparently we've been stockpiling!! Grin. I'm thinking a sausage casserole perhaps.

Then, later or next week, we need to have meatballs to use up those.

It's not a very interesting menu and definitely lacking in vegetarian options, but will do my best to keep the ratio of vegetables to meat high.

Oh, and DH and DS are having the poncy fishmongers from Waitrose that DD refuses to eat and we seem to have a glut of! DD and I will be out one night, they can eat them then. For those who like fish finger sandwhiches/wraps - if DH made them at 5:45, and they then ate them at 7:00 due to logistical reasons, will they be delicious or disgusting by then?!

Sat: bbq Southgate's African beef sausages and organic pork & apple burgers from Cork
Sun: spag Bol from freezer
Mon; new potatoes, carrots and salmon
Tues: Mac'n'cheese (with lots of bacon and veggies, and spare for freezer)
Wed: chicken wings and oven chips
Thurs: sweet'n'eour pork (using leftover roast pork, thinly sliced and frozen)
Fri: DH is fending for himself as I have a work event

We need to get more organised over the weekend and get more veg into meals again and do interesting things

Haven't updated here for a few weeks but back on the planning trail now. This week is mainly focused on using up bits and pieces from fridge and freezer.

Tonight: slow roast chicken legs with cherry tomatoes, basil garlic and cannelini beans.
Tomorrow: baked potatoes with egg mayo
Tues: DH is away so I'll have mackerel, avocado and walnut salad
Wednesday: chorizo rice
Thurs: pasta with remaining chorizo and peppers
Fri: chicken chow mein.
Saturday: Tom Kerridge's seafood and orzo one-pot (one of the few fish dishes DH will eat)
Sunday: out for dad's birthday dinner.

This week we've had:
egg, chips and peas
hallumi and vege kebabs with rice and salad
a ploughman's lunch type meal
pasta arabiatta
roasted paprika new potatoes with M&S fish cakes (dp) and cheese & onion bakes (me) and salad
All delicious.

This week so far will be:
a chilli with deconstructed guac and salad
macaroni cheese made with spicy chilli cheese and topped with chilli breadcrumbs and eaten with a salad
channa chaat with a paneer curry or a mushroom curry (depends on if I can get paneer in the local shop) and chapattis

Lots of salads here recently.

Did salad with chicken for lunch today. Didn’t fancy any of the seasonings I wanted to use. Literally- I’ll use this fajita mix- sniff and decide no, not those spices so I used lemon zest and oregano.

No idea what I want for dinner.

Well Friday ended with me making toasted ham and cheese sandwiches as I only got a small bowl of (lovely!) clam chowder at my event. And DH was peckish enough to want one too.

Yesterday - proper beef burgers, caramelised onions, coleslaw and new potatoes turned into pot salad

Today - scampi to start and salmon burgers with potato wedges

Tomorrow - either clam chowder or pasta a la vongole (I got a bag of clams and need some inspiration to use them)

Tues - probably pasta with bacon bits and mushrooms in mushroom sauce

Wed - something simple for DH, I'll be out drinking at a work section thing so probably platters there

Thurs - probably a chicken curry but I'll probably use a sachet of green saffron spice for a proper one

Fri - apparently we need to go to DMIL for the weekend (or at least DH), so on don't know will we be here and travel Saturday or travel Fri and get a takeaway

I have zero ideas and, as it turns out, very little in the cupboards and no plans or time for last minute shopping. Sigh. Why are meal times so relentless? I love cooking but sometimes I just want the whole thing to STOP.

I do have some pork mince and there are always some frozen veg knocking about so I'll do some kind of pork mince/veggie stir fry type thing tonight.

For rest of week, assuming I continue to feel totally uninspired, I better keep it simple so, ahead of my online shop I'll go with:

Tomato, Aubergine, chilli and and feta pasta
Something sort-of convenience food-like - maybe fishcakes with new potatoes and veg as we haven't had those for a while.
Similarly, chicken salad (probably will buy cooked chicken) and garlic bread
Fajitas - halloumi most likely.

Feeling sort of veggie so we are having:

Chickpea and pepper curry
Roasted carrots with rice, lentils and feta
Aubergine, mushroom and goats cheese burgers
Mini roast pork with veggies and New potatoes
We are out one night and also tomorrow, so that should get us to the end of the week.
