Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Sunday: party food at my niece’s 6th birthday
monday: cauliflower and parsnip tagine
tuesday: celeriac, potato, greens and it’s not bacon gratin
wednesday: chicken drumsticks, chips and broccoli for the others, fast day for me
Thursday: quinoa and lentil balls and spaghetti
Friday: pizza night
Saturday: undoubtedly veg-lurking-at-the-bottom-of-the-fridge-fried-rice before we go on holiday for a week

Today is Greek salad and picky stuff
Otherwise we’ve got:
lentil pasta bolognaise
veggie burgers
homemade cheese and onion pasties with salad
Can’t remember the other 2 that I’ve ordered the stuff for so hopefully it will be a nice surprise when the delivery comes!

Friday, we had a piri piri spatchcocked chicken and baby potatoes and piri piri peppers.

Sat was burgers and chips and garden salad.
Yesterday was leftover chicken and veg from Friday in a tomato and chilli sauce with pasta.

Today, DH is having the last bit of leftover chick (I suspect he's thinking curry).
Tomorrow he's having a fish pie.
Wednesday he is supposed to take a chicken pie from freezer for us both.

Today and tomorrow I am eating whenever and wherever I can as I'm on a work trip with very limited time. So quite possibly either a decent meal when last colleagues arrive and poss hosted the 2nd night. Or sandwich tonight and the nibbles at a reception tomorrow. I have a flapjack and bounty bar just in case.

The rest of the week, we'll figure out when I'm home.

Today- steak , herby wedges,asparagus and peas

T-Asian salmon,rice and stir fry veg

W-cauliflower mac'n'cheese and peas

T-jacket potatoes with beans and cheese

F- green veg and smoked mozzarella risotto

S-chilli and lime prawn tacos

S- breaded lemon pork chops ,roasted potatoes and salad

We're doing fairly well on loose meal planning. This week will be (mostly in no particular order)

Leek and pancetta tart with salad
Tuna jacket potatoes with salad
Asian-style pork mince and veg with noodles
Steak and veg
Something vegetarian with butternut - probably a risotto.
Saturday we're having a Chinese chilli chicken "fakeaway" as requested by DS!

Want to get into meal planning I find it hard to have the headspace tbh so we end up eating the same meals on rotation. I also have children with various dietary requirements so will often cook 2-3 meals a night either completely separate or variations eg if I'm making a curry one child will also need Quorn nuggets instead and one will need chicken nuggets, but all will have rice and naan iyswim

Qe have similar with dd being fussy and lactose intolerant. Meals she likes are made in larger batches for the freezer or fridge, and we so do adaptions at times. The air fryer is a godsend!

Tomorrow: chipotle jackfruit tacos
Saturday: lentil and mushroom Bolognese
Sunday: Veggie sausage with chips and mushy peas. Essentially chippy fakeaway.
Monday: Lentil sloppy joes and salad
Tuesday: west African peanut stew
Wednesday: at a fell run where there is allegedly some food after… we will see!
Thursday: Gochuchang tofu

Yes absolutely the air fryer is a godsend @SpaceOP ! We have 2 and before we got them I was literally putting the whole oven on just for 4 nuggets 😱. Our gas usage went down by a third when we got it!

Here's this week's meals (that we've already eaten some of).next week is half term so all bets are off 😂 probably lots of McDonald's on the way home from days out etc!

Mon...tacos with turkey mince we don't eat beef

Tues.... sausage pesto pasta

Weds....whole roast chicken, crusty bread, salad, potato salad etc, felt really summery!

Tonight....quesedillas with leftover taco mix

Fri...DC having McDonald's, DH and I having takeaway when they asleep.

Sat.... chicken korma

That's as far as I've got!

Completely lost my cooking/planning mojo in the past week and ended up playing by ear with daily shopping trips. Back on track now though and all planned up until next weekend.

Tonight: spag bol (sauce from a freezer/previous batch cook)
Tomorrow - bbq: venison burgers, pork steaks, corn on the cob, plus leafy salad, bean salad, potato salad, coleslaw, and moroccan carrot salad.
Sunday - chicken thighs with green olives and lemon with leftover bbq salads (or saffron rice if the salads have been snaffled)
Monday - chicken broccoli noodles
Tuesday - crustless cheese and onion quiche, carrots, peas and new potatoes
Wednesday - chorizo broccoli pasta
Thurs/Fri - away for two nights
Sat - pulled pork
Sun - roast chicken

Our menu for the week ahead:
Today: cheesy kimchi linguine (we actually made it with Sainsbury's basics spaghetti) highly recommended vegetarian meal this one
Rest of the week:
M&S pizza meal deal
Tomato and black bean burritos this salad recipe in tortilla wraps with some cooked chicken breast
Fish korma
Caprese chicken sandwich

Then we're out on Friday night.

Friday we had steaks on bbq with frozen chips and some frozen med veg I had chopped previously.

Sat was lamb burgers (bbq) with salads (incl a pasta salad made with leftover veg from night before).

Last night we had confit duck, roast potatoes and peas.

Tonight I am solo so possibly chicken drumsticks or sausages. And tomorrow solo as well so likely something with chicken involving the oven.

We'd, thurs and Fri- DH is solo. So probably freezer meals and takeaways.

I should do some salmon (frozen) and use some spinach from garden before it all shoots. Maybe.

Totally lost in recent months however a look in the freezer tells me we are ok till at least this weekend. Out for meals over the BH weekend and last night chucked a tesco family mac and cheese in the oven. I do not recommend it.
Tonight is lamb shanks, mash, veg and gravy
Wed Sausage mash egg and beans
Thurs Chicken stir fry with noodles
Fr Steak chips and pepper sauce or gravy

I made a lasagne yesterday. Today is courgette pasta. No idea beyond that - the nice thing about half term is being able to decide what I fancy on the day and just pick those bits up.

I'm quiet at work this week and although I'm out all day tomorrow with the DC, I'm around on the weekend. Thank you for mentioning lasagna - I think I'll do a batch cook and get a bunch of veggie and meat lasagnas in the freezer.

I usually do roasted butternut/aubergine/tomato for veggie but maybe will try spinach and ricotta this time. what do you do?

I do a pasata based sauce - fry onion/carrot/celery/red pepper/mushrooms/courgette/garlic. Add herbs, red wine, stock cube and tomato puree. Add pasata. Cook until the carrots are soft. Then I use the Merchant Gourmet lentil pouches as the 'mince' substitute.

Tomorrow- salad of roast carrots, halloumi, spinach, walnuts and honey (a sort of mashup of Nigella's carrot and halloumi salad and a similar dish from Roasting Tin Around the World)
Tuesday- fresh pasta (spinach and ricotta tortellini) with mushroom pesto and salad
Wednesday- broccoli and tomato quiche and salad
Thursday- lamb and halloumi pittas with salad
Friday - gnocchi and roast veg bake.
Sat - at a wedding.

Here's mine subject to change might swap the days round but as a rough idea...

Sunday...roast chicken dinner just a simple one chicken in the slow cooker, frozen roasties in the air fryer, ready chopped veg.

Mon... chicken fried rice with leftover chicken. Will cook rice at lunch then put in fridge.

Tues....either spaghetti meatballs or spaghetti carbonara.

Weds... chicken fajitas. May switch this out to halloumi fajitas for adults and chicken for DC.

Thursday.... whatever choice of spaghetti we didn't have on Tuesday.

Fri...pulled pork tacos. Corn on the cob .

Lunches for me (I'm at home in the week) will be Cesar salad with leftover chicken loving this at the moment. There's some brie in the fridge for brie and oatcakes. Might make some sweet potato coconut and chilli soup as got sweet potatoes to use up . 2 DC have school dinners 2 DC have packed lunches and we've got all that in already plus stuff for DH packed lunch.

Didn't get a chance to do the lasagna. Needless to say, my quiet few days weren't so quiet! hahaha.

The steak from last week didn't happen as we went out unexpectedly so having that today. I'm trying to do relatively high protein meals for DH, ideally ones that work well as leftovers a few times a week.

Rest of the week, in no particular order:

Aubergine, chorizo, tomato pasta
Roasted carrot and chickpea "salad" with rice/grains and feta
Roast chicken with veg
Salmon, rice and stir fried veg
Some kind of mince dish - to be decided.

Today: was going to do a veggie roast but it’s warm and I’m two pints down in a beer garden. Will either be salad or some sort of spiced rice thing.

Tomorrow - tofu and asparagus Thai green curry

Tuesday and Weds - veggie chilli with rice and guacamole on one day and with jacket spuds and baby tomato salsa on the other

Thursday - macaroni cheese or the roast we’re not having today

Kimchi fried rice
Pork and tofu meatballs, sautéed courgettes with chilli, soy roast potatoes
Cannellini beans in tomato sauce on sourdough bread.
Cape Malay chicken curry.
Courgette and cashew chicken curry.
Gnocchi and pesto.
Red pepper bisque.
