Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Hellenbabe, when I batch cook
Like that, I freeze days 2 and 3 for another week and use up previously frozen things to make space. So I'm not bored having the same thing too often at once.

You can get Pyrex dishes now to freeze meals in with plastic lids. Defrost fully then put in the oven (take lid off first) and serve still in glass dish.

And when I am short on dishes, I line them with baking parchment before making the dish, enough paper to come up
The sides over the top of the food, freeze, then take it out of dish, wrap the parchment paper package in cling film or foil (and label it), then
Pop back in freezer.

Just keep 1 empty dish in cupboard to pop your meal into when thawing (remove from freezer, take off foil/cling and parchment layers and place in dish while frozen, let it thaw as usual then cook/reheat as needed).

A text from local pizza/pasta restaurant with takeout deal caught me at a bad moment - so likely having that tonight...

We had no concrete plans except a possible "use up cooked chicken somehow" notion - and we'll pick away at that for lunches tomorrow and Saturday.

Mixed bag last week in terms of adherence:

Sat - spaghetti carbonara ✅️
Sun - Greek yoghurt marinated chicken thighs with pourgouri, tomato salad, bean salad and tzatziki.✅️
Monday - at PiLs✅️
Tuesday - falafel with leftover salads from Sunday (falafel might be in a pitta - depends on amount of leftover pourgouri)✅️ (sort of - was griddles aubergine with the leftover salads)
Wednesday - pasta with tomato and courgette sauce ❌️ Was Shashuka
Thursday- shasuka ❌️ was Fasolaki
Friday - lamb pilaf ❌️ ended up going for after work drinks and had cheese and biscuits later at home.
Saturday- out at a gig, will eat out
Sunday- Jambalaya ❌️ Was roast chicken

This week:
Today: pasta with courgette and olive sauce
Tomorrow- at PiLs
Wed - veg/lentil soup with egg rolls
Thursday- soup with bacon rolls
Fri - tagliatelle with kale, bacon, walnuts and chilli
Sat - risotto primavera
Sun - Parents for Sunday roast.

Been on holiday so dropped off. Coming back on Sunday and weirdly excited to eat my own food 😂
Monday: teriyaki veg stirfry
tuesday: roast vegetable and feta pasta
wednesday: out with friends
Thursday: carrot and corriander soup

This week has not been great:

Fri: slow roast lamb, bany rosaries, roasted med veg, gravy
Sat: bbq steak, garlic mushrooms, potatoe croquettes
Sun: HM chicken pie with leftover veggies and salad
Mon: (genuinely can't remember)
Tues: Nasi go rent stir fried rice with prawns and tuna and lots of veg
We'd: chicken and chips from takeaway (only home at 9pm and DH coming home via chipper from opposite direction)
Thursday: am on train home now so will raid fridge - may resort to crisps and wine
Fri: possibly chicken joints roasted with lemon, or some kind of pasta

Thurs: Prawn & smoked salmon orzo
Fri: Eating out

That lentil bake looks lovely and I'll definitley be filing it away for future, as well as some of the other options on the same page. In fact, I think I'm going to do the tuscan bean bake this week.

We're going to be out several times this week so only a handful of dinners at home and I'm planning:

Monday - gnocchi and roast vegetable bake
Tuesday - out
Wednesday - Tuscan butter bean bake
Thursday - fasolakia
Friday - out
Saturday - out
Sunday - spatchcocked piri piri chicken and salad.

Sunday - picky meal - more cheese, grapes, etc (cheese and pineapple on sticks because I'm hankering after them!)
Monday - vegetable soup and fresh bread, probably
And in no particular order:
Richmond veggie sausages in crusty rolls with fried onions and chipotle corn on the cob
Asparagus and tofu peanut chilli stir fry with noodles
Black bean tacos with pineapple salsa
something else which is in my Sainsbury's order but I've currently forgotten!

Been lurking for ages because I just finished up a 4 month gig that didn’t have me home at all so I was basically eating hummus and falafel on the train home while DH held down dinner for the others.

got a great haul in the veg box this week and broken open Nistisima which I haven’t cooked from for ages so have planned out this week almost entirely from that:

mon: upside down layer cake (tis a savoury concoction of aubergine, rice, cauliflower, tomatoes etc)
tues: mushroom and caramelised onion pilaf
weds: burgers, chips and purple sprouting broccoli
Thurs: slow cooked beans and garden veg stew
fri-sun it’s my birthday weekend and we’re in London, street and pub food for every meal!

Friday ended up being Indian takeaway.
Saturday we had gammon, HM chips and a dippy fried egg.
Yesterday, doner kebab and crispy chicken burger en route to Bruce Springsteen concert 😁

Tonight I had planned baked courgette but DH is not travelling after all so sausages and mash.
Tomorrow probably a chick pie from freezer
We'd fresh pasta and tomato sauce with veggies (and maybe bacon)
Thursday poss something with chicken drumsticks and veg chucked in the oven or salmon ...
Fri DH is fending for himself as I am having chicken and pasta on cub camp...there will also be gallons of tea!

I'm back after absolutely failing at planning the last few weeks. 2 week plan sorted and shopping arrived this morning.

Week 1

Mon - spiced chicken thighs and ribs, salad, coleslaw and grilled corn
Tue - smoked haddock, new potatoes, tender stem broccoli and green beans
Wed - sausages and baked potato mash and veg (baked potato mash is a hack i saw on SM where you bake 4 potatoes in the air fryer, scoop the flesh to make mash and save the skins for the next day to make cheese and bacon potato skins so 2 meals from one portion of potatoes)
Thu - beef chilli and potato skins
Fri - baked potatoes, tuna, cheese and coleslaw
(Just realised it's a potato heavy week so might swap this out for something else actually)
Sat - Eurovision!!!!! So party buffet type thing
Sun - rigatoni bolognaise pasta bake and salad

Week 2
Mon - some sort of leftovers, I've got portions of chicken curry and lasagne in the freezer
Tue - jerk chicken, rice and peas and salad
Wed - Tuna steaks with a ginger, lime and coriander dressing with new potatoes and griddled asparagus, broccoli and mangetout
Thu - penne al rustica
Fri - homemade mozzarella burgers
Sat - spicy sausage baguettes
Sun - roast pork dinner

We've been away, come back, been away.... it's all been a bit hectic. This is us for the next week or so - I'm going for simple where possible and less carbs for me where I can.

Tonight: steak and vegetables, potatoes for the rest of them.
Tomorrow: Chicken salad, garlic bread for the rest of them.
Thursday: Tomato and aubergine pasta (on courgette and broccoli for me)
Friday: Roasted carrots and cauliflower with rice (less rice for me!)
Saturday: we're out. Yay!
Sunday: if I work up the energy, roast lamb.
Monday: Curry of some sort, most likely Korma. Not sure.

All of this could change as there are a few variables including a work lunch for me one day!

I need to lose some weight so am hoping that I manage to meal plan, and stick to it, better than I have been recently.

Wed: Persian Herb Frittata (Roasting Tin Around the World) with rice and salad / veg
Thu: Ras el Hanout Roasted Chickpeas with Broccoli and Halloumi (Anna Jones) with homemade flatbread
Fri: Sweet and Sour Marinade Tofu (Aine Carlin) with Jersey Royals and veg
Sat: Spinach, Chickpea and Tomato Curry with Rice and Roast Mushrooms
Sun: Roasted Aubergine with Curried Yoghurt (Ottolenghi) with rice
Mon: Quorn Meatballs, with Sour Cream, Dill and Tomatoes (a take on a Roasting Tin recipe) with Veg and Jersey Royals.

@Lastqueenofscotland2 I'm not really a fan of chickpeas but I'm trying to eat more healthily and lose some weight so I'm embracing the chickpea!

That recipe was lovely by the way, very tasty, I loved the orangey dressing too. It's here (https://www.theguardian.com/food/2019/may/10/anna-jones-chickpea-recipes) if you want to try it.

Most of last week went as planned apart from last night when we had chicken slouvlaki, rather than spatchcock spicy chicken.

This week, I'm planning:
Today - broccoli quiche with salad
Tomorrow - Mexican style chicken and black beans with rice
Wednesday - creamy red pepper spaghetti
Thursday - mushroom, chickpea and spinach curry
Friday - Greek Salad pasta

Pretty much stuck to it last week. Turned roast lamb into lamb gyro but was delicious!

Supposed to be curry today but probably going to swap that to tomorrow using the leftover lamb.

Today we will have butternut ravioli with a tomato sauce
Tomorrow: curry
Wednesday: fish with potatoes and veg

I haven't actually got beyond that as haven't don't any shopping or planning but maybe bobotie one night and something vegetarian the other.

Sunday: DH made pasta and meatballs with pasta sauce and extra veg
Mon: chicken fajitas
Tues: chicken drumsticks roasted on a bed of passata and frozen stir fry veg (I had med veg chopped in freezer, but carrots and baby corn kinda worked), and baby roSties
Wed: baked salmon, mash, and my baked courgettes (good sprinkle lemon juice, topped with buttery breadcrumbs with Parmesan grated in)

Tonight um I'll think of something
Tomorrow probably chicken pie from freezer
