Mezcla Cheesy Roasted Aubergines with salsa roja
I made this last night - the only recipe version I could find online was this Dutch site but I did C&P the text into google translate and it worked! Ixta describes it as her riff on aubergine parmigiana...

Really good dish - the salsa roja I freewheeled a bit as I had unidentifiable whole dried chilies with the label missing and some ancho chilli flakes - but a tomato chilli sauce is to your own taste right?!

Very simple to do - cross hatch halved aubergines and bung in the oven on high temp. Cook sauce ingredients and then blitz in processor, mix up various types of cheese and then when aubergines are done smother in salsa roja, top with cheese sauce and pop back in the hot oven to blitz....

I don't have a massive aubergine repertoire - sichuan fish fragrant aubergine being my favourite, plus parmigiana/moussaka and pasta a la norma (or variations thereof) so it was good to add a new variation.

I’m sure it’s not super authentic but it’s simple and saves traipsing round 839 Asian supermarkets for each ingredient!

Last night ended up being mushrooms and bacon in a tomato and mascarpone sauce over pasta.

Tonight DH is out at a retirement so, so I am solo. My plan is lemony courgettes - courgettes sliced lengthways and laid in casserole dish with lemon squeezed over. Layer of breadcrumbs (with lots of butter, lemon zest and Parmesan grated in). Another layer of both on top. Good extra grazing parm over top and baked. No need for meat or potatoes or other carbs, just a good cold glass of white wine.

(I started doing these courgettes as a side dish but I loved them as a meal...but DH just puts up with them as green mush and Dd hates courgettes so I only do them for myself now).

I'm having a dreadful few weeks months on the food front and really need to sort it out. The hope for this week is:
Gnocchi prob with pesto
Tofu stir-fry
Something to use up a celeriac, tbd
Sweet potato and rice, either satay or katsu sauce
Salad with figs, pears and blue cheese
Dhal and rice (from the freezer)

All pretty dull here - really struggling to think about exciting things with us both working full time and only feeding two of us:

yesterday was a sort of bastardised rice and peas thing with spiced Quorn pieces with onions, peppers and roasted corn on the cob

tonight is jacket spuds and salad

tomorrow was supposed to be bean burgers but Sainsbury's didn't deliver some of the stuff and our local shops are rubbish - it will be pasta arabiatta (which was supposed to be Thursday)

Thursday - not sure: maybe omelettes and salad or maybe freezer surprise or bottom of the fridge curry

Friday - out

DS back from uni Monday so v excited! And will be spending much more £ on food

tonight - whole sea bass cooked with tarragon, new potatoes and PSB
Sat - wholewheat orechiette w broccoli and tomato bake
Sun - tbc veg risotto
Mon - tandoori chicken sliders
Tue - pan fried sea bass, crushed potatoes & peas
Wed - freekeh salad w feta, tomato & avo salad, grilled chicken w lime & coriander
Thu - out
Good Fri - family gathering: salmon, pork, salads, tart, Easter rocky road etc
Sat - leftovers/out
Easter Sun - spring chicken casserole, greens. Passion fruit pavlova
Easter Mon - gammon, cauli cheese, mash OR if loads of salmon left from Friday: salmon, PSB green bean & potato w tarragon cream sauce.

Much more chicken heavy than usual fodder as DS home and at his request.

Tomorrow: lamb steaks, honey mint sauce, new potatoes and some sort of green veg
Sunday: chicken, bacon and pea casserole with celeriac mash (Tom Kerridge Lose Weight book)
Monday: pasta with tomato and chorizo sauce
Tuesday: veggie chilli
Wednesday: chicken and pepper traybake
Thursday: broccoli quiche, new potatoes, peas and spinach
Friday: orzo, broccoli, lemon and walnuts (Roasting Tin book)

DH & the DC are away until Monday evening so I only have me to cater for this weekend 😃. I’m having prawn cocktail salad for lunch and putting together a little cheese board tonight to have with a glass or two of wine in front of the tv.

Tomorrow will be another no effort required day. Lunch - mushroom, spinach & cheese omelette with salad and crusty bread, then I’m meeting my sister for early evening drinks and tapas.

Last week, we did convenience week due to work:
Mon spag Bol from freezer
Tues chicken stir fry with leftovers from roast
Wed beef pie from freezer and mash
Thurs piri piri chick (from freezer) and veg (potatoes weren't cooked enough so for thrown into Fri dinner)
Fri chorizo potatoes
Sat burgers and chips at a rugby match
Sun confit duck leg, roasties, steamed broccoli

Dh fending for himself tonight and tomorrow - I'll probably have pasta tonight and a burger in airport tomorrow

Wed is a small bacon joint and probably broccoli and mash with that

Thurs I am at a retirement do so finger food and Dh will fend for himself (I anticipate at least 1 takeaway this week!).

Fri Dh and Dd will be in DMIL's so probably smoked fish and mash. I'll either be in my DPs (fish pie) or home alone (probably prawns or whatever looked nice in fishmonger's).

Dh is asking DMIL to make her minced beef pie on Saturday and there'll be a roast on Sunday.

Whereas DF will likely try to bbq if he can Saturday and DM will definitely do roast lamb Sunday. (Or I'll do some nice slightly involved cooking here at home).

I've not been meal planning for the last few weeks as I have had some stuff going on. Going to try to get back into it from this week, online shop has been ordered and I am ready to go. I'm also going to try to make one soup and one dessert each week.

FRI: Sun dried tomato, garlic, mushroom and courgette tagliatelle
SAT: Spicy sweetcorn fritters (from the freezer) and Chipotle roasted mushrooms and potatoes (Roasting Tin Around the World) with smashed avocado
SUN: Quorn meatballs with sour cream, rice and tomatoes (Roasting Tin Around the World)
MON: Greek tofu skewers with tzatziki (Dr's Kitchen - Eat To Beat Illness)
TUE: Roasted aubergine with curried yoghurt (Simple) with wholegrain rice
WED: Saag Aloo Pie (From the freezer - One Pot, Pan, Planet) I didn't like the topping when we had this previously so am going to remove and replace with some root veg mash.
THU: Spiced Leek and Mushroom Tart (Green Roasting Tin) with Jersey Royals (I love Jersey Royals season!) and broccoli (and maybe carrots)
FRI: Turkish-style orzo with Spring Veg (Tesco)

SOUP: Spiced Carrot and Lentil (BBC Good Food)
DESSERT: Spiced Apple Cake (Simple)

Not been meal planning for a couple of weeks as DH was away etc etc. Also, have ditched my lovely veg box delivery - whilst it prompted me to be a bit more inventive around using vegetables as mainstay, I felt recently too often the boxes were taken up with 'filler' vegetables. We have an awesome independent grocers in the city centre and so I've decided to spend local and be strict about buying vegetables first and then planning meals... to that end this week we are having

Sunday - Ottolenghi oyster mushroom tacos with all the trimmings
Monday - Cookhouse stew (named after Newcastle restaurant who shared this home dish on insta during lockdown and has become chez myrtle staple) - chard stem, onion, fennel (or carrots/celery - whatevs!) chorizo, chickpeas and then chard leaves)
Tuesday blue cheese chicory and fennel gratin
Wednesday pasta romanesco (rachel roddy)
Thursday Stuffed aubergine in curry and coconut dhal (ottolenghi)
Friday kohlrabi meuniere (ixta belfrage)
Saturday roast chicken thighs/lamb legs with spicy kohlrabi 'noodle' salad (ottolenghi)
Sunday panzanella with antipasto
