Very much looking forward to getting back on the bandwagon and not eating another Pringle for 11 months.

Tomorrow: Tuscan gnocchi
Saturday: pizza take out
Sunday: enchilada bake
Monday: Jambalaya
Tuesday: Thai peanut noodles
Wednesday: friend is cooking
Thursday: mushroom stroganoff

Last week didn't go according to plan! But good food was eaten. Hopefully next week is better

Soy tuna with wasabi mash and green beans
Double bean and roasted pepper chilli
Aubergine parmigiana
Lemon orzo chicken or lemon, cauliflower and caper orzo.
Veggie bolognaise
Ricotta, spinach and tomato frittata
Pasta pesto if needed.

This week, we had:
Sun roast pork, roast potatoes, cauliflower cheese and appley beans.
Mon sweet n sour pork with noodles
Tues burgers and roasted baby potatoes
Wed chicken chasseur and garlic/herb potatoes

Tonight DH is suggesting going out to local gastropub (if I skip yoga)
I suspect we'll have something that needs some cooking effort tomorrow - possibly a risotto or similar.
Saturday is likely going to MIL's for the night so plain fare - and a roast on Sunday before we leave so a small meal for dinner.

(Appley beans are cannelloni beans and onion which had been slow cooked the last time I did pork in apple juice, but we had so many beans left over that I froze them).

Monday: Gochujang tofu with stir fried veg and rice

This week we have had/doing -

Monday-teriyaki chicken and veg stir fry with noodles

Tuesday- cod mornay, lemon and parsley potatoes and green beans

Wednesday- lamb casserole with dumplings

Thursday- nigellas chicken schnitzel with bacon and white wine,crushed new potatoes and green vegetables

Friday- homemade chicken soup with pearl barley, leeks and carrots

Saturday- pasta alla Norma

Sunday- out for lunch

First caravan trip of the season tomorrow!

Dinners will include pancetta pasta, chicken casserole and sausages with onion gravy. A hearty affair. Feeling excited to have an oven, hob and microwave. We've camped for years and it's our maiden voyage in the plastic house.

Sat: Spaghetti & quorn meatballs
Sun: Seabass with lemon caper dressing, baby potatoes, greens
Mon: Two bean and roast pepper chilli (BBC GF)
Tues: I’m thinking of making this Harissa crumbed fish with lentils & peppers using haddock.
Wed: Omelettes, chips, salad.

And that’s as far as I’ve got!

Trying unsuccessfully to plan for the week ahead. @Lastqueenofscotland2 how do you make your gochujang tofu? I bought some tofu as my eldest said that she wanted to try some. I was thinking about making mapo tofu but all the recipes I have found have ingredients that I can’t get hold of.

After a nice end to last week (BBq'd steak on Friday, tarragon chicken with peas and roasties Sat, and chicken wings and chips last night with blue cheese dip), this week is back to convenience as I am in the office daily.

Today: spag Bol (from freezer)
Tomorrow: game stew (M&S slow cook range) and mash or a bought grain potatoes
Wed: prawn stir fry with rice or noodles or chicken or mushrooms risotto probably
Thurs: pizza (dough and sauce frozen)

I have a few things I can alternate from the freezer if needed as the week goes on.

Monday- ramen bowls with chicken and tenderstem broccoli

Tuesday- jacket potatoes,beans and cheese

Wednesday-sausages and cauliflower cheese

Thursday-spaghetti bolognaise

Friday- halloumi fajitas

Saturday-chicken massaman curry and jasmine rice

Sunday- lamb loin ,roast potatoes and green vegetables.

  • sweet spiced mushroom and pilau rice (Ottolenghi)
  • roast turkey and trimmings (all from the freezer)
  • turkey broth and Yorkshire puddings
  • probably turkey curry!
  • Aloo Gobi shepherds pie
  • either pie from previous night or spinach and chickpea curry
  • ratatouille
  • halloumi tagine
  • tuna and apple pasta bake
  • gnocchi and pesto if we need something easy,

Hi @Lastqueenofscotland2 I posted this review over on the "new meals" thread - the only online version I could find was in Dutch but google translate works!!

Mezcla Cheesy Roasted Aubergines with salsa roja
I made this last night - the only recipe version I could find online was this Dutch site but I did C&P the text into google translate and it worked! Ixta describes it as her riff on aubergine parmigiana...

Really good dish - the salsa roja I freewheeled a bit as I had unidentifiable whole dried chilies with the label missing and some ancho chilli flakes - but a tomato chilli sauce is to your own taste right?!

Very simple to do - cross hatch halved aubergines and bung in the oven on high temp. Cook sauce ingredients and then blitz in processor, mix up various types of cheese and then when aubergines are done smother in salsa roja, top with cheese sauce and pop back in the hot oven to blitz....

I don't have a massive aubergine repertoire - sichuan fish fragrant aubergine being my favourite, plus parmigiana/moussaka and pasta a la norma (or variations thereof) so it was good to add a new variation.
