Brazilian stew with palm hearts - recipe from Lad Iguanas
Cauliflower cheese and jacket spuds
Nigella's fish finger bhorta

Mominatrix that meal plan sounds wonderful!
Today was Ottolenghi's green pancakes with lime butter. They were ok...
Two this week we had last week but are so good we will be repeating sooner than intended:
Chickpea and veg kofta (Sabrina Ghayour recipe)
Polenta with mushrooms (Ottolenghi)
Other than that, jacket potatoes, butternut tortellini I found in the freezer, sweet potato katsu curry and baked camembert.

I struggle to plan more than five days in a row, because of vege. But I suppose I could plan for more meals and then just pick some fresh vege up half way through.
This is basically what I've done. Also some veg last better than others. So, for example, that's why I've got fajitas next week as peppers and onions last for much longer than the cauliflower. Ditto, my sausage pasta has courgettes as the main veg with a few tomatoes tossed in too, and the courgettes should last. Beef stew will have onion and carrots and also cannellini beans - so again, a good one for next week.

I'm expecting to have to get a few bits in, probably twice. But as we have to do the milk/bread run regularly anyway, I think that's okay.

I've promised DP the fish finger bhorta again at some point in the next 5 or 6 days. Also, Mominatrix has inspired me to maybe do some sort of burger, perhaps with homemade wedges.

Okay - the next week or so is:
black bean soup - tomorrow
veggie chilli - Weds
and then in no particular order:
fish finger bhorta
veggie hotdogs with wedges and corn on the cob
veggie spag bol
veggie pie and mash with vege
something with potatoes and leeks, maybe a gratin or perhaps a soup
cous cous with roasted vege (this might be a lunch, rather than a dinner)
maybe a lentil soup, or maybe some sort of lentil dhal or dhansak

CBD - I just noticed about your mum. I'm so very sorry.

Saturday: Dahl leftover from this week (i swear it’s fucking breeding) and naan
Sunday: Rasta pasta
Monday: lentil and veg Thai curry
Tuesday: leek and potato soup and sourdough
Wednesday: mapo tofu
Thursday: chilli tortilla chips
Friday: veggie paella with broadbeans, sundried tomato and olives.

I have a glut of kale and carrots, so there will definitely be carrot and coriander soup for lunches (probably for the next week!!!). Otherwise the next week looks like this:

Today: spicy beef stew
Friday: pizza
Saturday: picnic (will probably use up some of the carrots as chips)
Sunday: chicken, kale and coconut curry
Monday: spicy lamb stew (uses up leftover lamb in the freezer)
Tuesday: chicken stuffed with kale and marscapone
Wednesday: spag bol
Thursday: fish & chips

will possibly not need a veg box next week as we have lots and I don't want to throw anything out - any ideas for watercress?

Well, I can report that it's only day 5 but going well. The fridge is looking a bit dire, but when I checked my menu for next few days I realised it's fine because I do in fact have what I need. Who knew meal planning could be so effective!? Grin

Although DD is OUTRAGED as I forgot to double up on chocolate biscuits and we're about to run out. SO I may need to do an emergency shop earlier than planned.

Slow cooked brisket
Pasta dish with leftover brisket
Soy and ginger salmon tray bake
Creamy chicken and sun dried tomatoes

The Dishoom book is so lovely, but I've not made much from it yet. I'm put off by the fact that many of the recipes depend on a tomato/onion base that's made in advance, and I've not managed to get my act together for that, as yet.

Watercress has many uses - in soups, salads, sandwiches, or, as they do in Korea, as a side for rice where you steam like spinach and seasoned with sesame oil, sesame seeds, salt, and finely chopped spring onion.

I bought the Dishoom book over Christmas and it's beautiful, but so far I've only looked at the pictures Blush. Have a meal plan until nearly the end of the month to use up cupboard/freezer stocks so definitely want to add something from my new books (Santa brought Persiana as well).

@RemusLupinsBiggestGroupie it turns out chocolate biscuits aren't the only day to day items I left off.... I'm all good on actual meals. But we're out of yoghurt and apples and humous and other similar things. To be fair, we can get all that at the local tesco but DD's chocolate biscuits cost £3.16 today vs £2 normally (which I already think is OUTRAGEOUS) so I see a quick trip to a proper supermarket in my future. At least I won't be doing a really big shop though - I honestly can't face it.

HOW MUCH for biscuits???!

I braved the local Co-Op today for pizzas, bread and milk. It was almost empty and their 'posh' pizzas are some of the nicest supermarket pizzas, I think.

So, today's tea is pizzas (will add onions, peppers and mushrooms to the bought ones), with rocket salad (oodles of posh balsamic vinegar, red onion, Parmesan).

@RemusLupinsBiggestGroupie I know, right!? The normal price is actually 1.49 or, I think, discounted to £2 for 2 packets. But I couldn't believe co-op was ripping me off that much so I even got the full price wrong. these

DH and I have agreed we have to do a small big shop tomorrow. My meal planning has worked, but it's the other stuff I didn't manage the successful 2 weeks and I can't justify spending what will probably be £80 at Co Op for what will probably cost £50 at a regular supermarket, even a pricier one like Waitrose (in lockdown, we have a smallish waitrose which is by far the easiest place to shop we've found).

And totally agree re Co Op pizza. The stone baked/ sourdough ones I think are amazing. And not too badly priced in comparison to other supermarkets.

I will try Coop pizza, sounds great! I bought the pizza express ones yesterday as they were half price and they were so bland ☹️

I'm making Cornish pasties for the first time ever today and we'll have those with beans (and chips too if my dad has his way!). Hoping they taste good as they're so cheap to make.

Finalised my order today. This week’s lunches and dinners will be:

  • giant American hot dogs with crudités (DS2 begged for them)
  • Steak, spinach and ricotta gnocchi, roasted carrot
  • ham and cheese toasties with crudités
  • spinach, artichoke and chicken stew
  • jacket potatoes with broccoli and cheese sauce
  • salmon poke bowl
  • green shakshuka (Swiss chard and eggs with avocado and radish)
  • butternut squash bread salad
  • sweet and spicy tofu and soba noodles
  • Japanese eggy rice bowl
  • spicy veggie udon noodle soup

Sweet treats will be apple pie, and peanut butter cookies

Hello team! Have missed my meal plan gang (have NC I used to be IJumpedAboardAPirateShip) and am finally back home and cooking for my own family again

This week:
Saturday: beyond burgers, wedges and coleslaw
Sunday: smoked tofu with fennel, pak Choi satay dressing
