Jacket potato fillings - ideas please?

I love jacket potatoes for lunch - I work from home so if it's not a homemade soup, it's a spud. Normally my fillings are baked beans and cheese, or coleslaw and cheese. I'll use up suitable leftovers if there are any, no problem, but I'm looking for ideas. I'm bored of my two standard fillings on days when I've no leftovers.

What are your favourite fillings?

Tuna mayo, chilli or coronation chicken - I am pretty dull.

Sour cream, black pepper and chives.

Cheese and pineapple!

Chicken, bacon, mushroom & sweetcorn in mayo

Or I scoop them out, mash with cheese, onion & peppers (maybe some chorizo if I have any in) and dollop back into the skins. I stick them under the grill for a few minutes until the cheese is bubbly.

Cheese and sweetcorn is my favourite. Put it back in the oven or under the grill, so the cheese melts.

Grated cheddar, walnuts and chopped apple. Blob of mayo. Lots of butter on first though of course. Yum!

Tuna mayo but with salad cream.
Cheese and onion sandwich filler.
Beans and cheese.

Salsa & cheese!

Blinking heck, I'm so glad I asked! Cottage cheese is a great one. I feel really stupid not having thought of any of these. Live the cheese, apple and walnut idea too. Mum used to make that salad when we were kids, in the 70s. So many amazing suggestions!

Liquidised cottage cheese with chopped chilli, red onion and green peppers, no salt because it spoils it for some reason.

Baked sweet potatoes with soured cream and either mango salsa or chunky guacamole.

Baked potatoes with:
leeks in cheese sauce
blue cheese and mushrooms
Greek salad

Chilli or bean chilli with cheese?

Feta mashed with chopped red onion and finely chopped red or green chilli and a bit of olive oil.

Philadelphia cheese with those crispy bacon bits you can buy in tubs. This is particularly nice with a sweet potato

Curried baked beans? Usual beans with a teaspoon of curry powder and a few raisins. Sounds nasty, tastes fab.

I usually have veggie chilli, or plain cottage cheese. My DH loves tuna mayo spud.

I would only ever have butter, cheese and beans on mine. Nothing else.
