Jacket potato fillings - ideas please?

I love jacket potatoes for lunch - I work from home so if it's not a homemade soup, it's a spud. Normally my fillings are baked beans and cheese, or coleslaw and cheese. I'll use up suitable leftovers if there are any, no problem, but I'm looking for ideas. I'm bored of my two standard fillings on days when I've no leftovers.

What are your favourite fillings?

I generally have homous and salad with mine but have also had them with crunchy peanut butter and a sprinkle of chilli powder a few times.

I quickly fry some halloumi to brown it, cover in sweet chilli sauce. Yum.

Other quick fave is pesto, grated cheese and baby tomatoes. Even better bunged under the grill to brown.

salmon and salad cream
chicken and mixed salad
scoop out mix with leeks and bacon and cheese.then restuff and griddle
scoop out.fill with mince.retop.mini shepahard pies
lots and lots of butter and marmite.
coronation chicken.
fan slice and fill the gaps with garlic and butter.
roast veg and a jacket.roast red onion.peppers.carrots.garlic

Leeks! Microwaved in butter and mashed into the potato with black pepper. Uncover the leeks for the last two minutes of cooking to make sure they're not too wet. Add soured cream (cutting down on the butter) and chives if liked. Sweet, lovely leeks. Be generous with them, they don't add much bulk.

Corned beef if I'm in the mood and have some. The low fat version is best for this.

Cheese ‘n’ beans always. Or sometimes just butter and black pepper on the spud, with a vinaigrette dressed salad on the side. Honestly that sounds dull but it’s delicious.

My go to is beans and cheese when I'm feeling lazy but I love chicken and bacon. coronation chicken. Soft cheese and ham.
Tuna and sweetcorn. And anything I have in the fridge that day, so mainly sandwich fillers Grin

I have a potato most days at work and the canteen does lovely cowboy beans - beans with bbq sauce and chopped sausage and bacon - delicious!

I love making my baked potato with minced beef, cheddar, and mushrooms. My kids also love spicy bean and bacon in their baked potatoes.

I have an old Sainsbury's recipe card from years ago with a great idea for baked potato. Fry bacon lardons, mix a drained tin of mixed bean salad with grated carrot and white cabbage. Make a dressing with some of the vinaigrette from the beans with a bit of creme fraiche. Mix it all together and serve on the spud. Kinda like a fancy coleslaw. Very tasty. Really fancy it now but have none of the ingredients in. Sad

I had chili beef and grated cheese in a potato the size of a planet for lunch today - delicious!
