Jacket potato fillings - ideas please?

I love jacket potatoes for lunch - I work from home so if it's not a homemade soup, it's a spud. Normally my fillings are baked beans and cheese, or coleslaw and cheese. I'll use up suitable leftovers if there are any, no problem, but I'm looking for ideas. I'm bored of my two standard fillings on days when I've no leftovers.

What are your favourite fillings?

My word! You lot are amazing and these all sound delicious. i'm copying and pasting them into a word doc that I can have inside my cupboard door. No more boring spuds for me!

I scoop out the potato, mix in mayonnaise, grated cheese and chopped ham and put it back in the potato then in the oven so the cheese melts

Chilli and cheese
Tuna, sweetcorn,mayo (topped with cheese)

Chilli and cheese tuna mayo. Ham and cheese
Prawn cocktail or prawn mayo
Chicken curry

Chicken tikka and cheese!

Sweetcorn, sour cream and chive dip, garlic butter. Illegal quantities of garlic butter, not necessarily in that order. Don't speak to anyone else for at least a week afterwards.

Jacket potato with beans for me! boring I l know

Although I do love hummus on jacket potatoes too. Hummus just goes with everything. Yum

Fried button mushrooms with garlic and herb philadelphia - melt the philadelphia in the pan with the mushrooms so it's more like a sauce.

When I was diagnosed with Coeliac Disease I discovered that pretty much anything you like on bread, pasta, and rice tastes equally good on a potato.

Especially taco meat or beef chili with fixings, chicken tikka/curry, and Beef Stroganoff. But not together

Coronation chicken. You can buy it ready made in a tub and just
Slap it on the spud

cottage cheese with pineapple (used to have this all the time)

Prawns with mayonnaise

Crabsticks (cut them into small pieces) and mixed with mayonnaise

Prawn with marie rose sauce (stir a bit of ketchup into mayo).

Cheese and beans

Sometimes I have it with baked mushrooms and peppers and a bit of salad dressing.

Houmous and ham. Mash the houmous into the potato and top with ham. Sounds odd but it really works

Cream cheese and marmite is amazing in a jacket potato

smoked mackerel flaked and mixed with cottage cheese

Chilli is quite nice and then you can have the rest of the chilli for a meal

Cottage cheese and sweetcorn, cream cheese and ham, tuna mayo, cheese and bacon bits, cheese and coleslaw. Or just butter

Jalfrezi or madras curry!

Sour cream, bit of salt, sweet corn and bacon. Only way I have my jacket potato!

Cheesy beans but not cheese on top of beans. Grate cheese into beans and simmer to melt.

Prawn mayo.

Avocado, bacon and boiled egg is nice as well if you slice the avocado and egg into chunky slices

I have tomato on jacket potato with cheese and ham sometimes. I’ve also tried fish.
