Jacket potato fillings - ideas please?

I love jacket potatoes for lunch - I work from home so if it's not a homemade soup, it's a spud. Normally my fillings are baked beans and cheese, or coleslaw and cheese. I'll use up suitable leftovers if there are any, no problem, but I'm looking for ideas. I'm bored of my two standard fillings on days when I've no leftovers.

What are your favourite fillings?

Don't know if anyone has mentioned this one yet.

Mushrooms fried in garlic butter mixed with the inside of the potato. Then pile the mix back in the jacket with stilton cheese on top and slightly melt under the grill.

Tonight, I'm using up some red pesto in our spuds, with garlic mushrooms and a little sour cream stirred in, alongside some sliced avocado.
