Jacket potato fillings - ideas please?

I love jacket potatoes for lunch - I work from home so if it's not a homemade soup, it's a spud. Normally my fillings are baked beans and cheese, or coleslaw and cheese. I'll use up suitable leftovers if there are any, no problem, but I'm looking for ideas. I'm bored of my two standard fillings on days when I've no leftovers.

What are your favourite fillings?

Smoked mackerel and spring onion

Bacon and blue cheese

Chicken and bacon mayo, with loads of butter.

I use leftover bolognese or chilli for jackets, then do some tuna and sweet corn mayo, cheese, sausage and beans.

2 cheese and spring onion ( grated cheddar and Red Leicester - nice colour combination with mayo and chopped spring onion )

Spinach , tomato and. Feta

Finely chopped bacon fried till it's crispy with chopped spring onion and loads of grated mature cheese. Dont forget the butter and black pepper!

Hummus!

Spag bol (sometimes I batch make so can have with jacket pots)
Ratatouille
Cheese salad with mayo
Tuna sweetcorn mayo
Tinned toms
Mushrooms and cheese sauce
Corned beef hash
Cooked tuna (with onion and tomato)
Chopped bacon and BBQ sauce

Really want a jacket potato now

Cheese. Or ham if I’m out with friends.

Soft cheese and sweet chilli sauce
Sour cream and chive
Feta and black olives

crab stick and prawns mixed with onion and garlic dip

I'm hungry now. :(

Leftover chilli
Leftover gravy (from roast) with steamed kale and mushrooms
spring onions and vine tomatoes chopped up
coleslaw

Chicken, spring onion, grapes and tarragon in Mayo/yoghurt mix.

Baked sweet potato, sliced red onion, feta and spinach salad with a blasmaic dressing,

Left over Bolognese always works in this house. There are always left overs when I make it so I always our it over a jacket.

Chilli also the same

I'm pregnant and can only eat beige things so for me today it's a plain jacket with butter. Going up to OH's mums this weekend and dreading lunch - as there are so many of us it's always jacket potatoes but she refused to buy anything other than clover

Hummus. Or Longley cottage cheese with loads of sweet chilli sauce. Or M&S broccoli cheese. All accompanied by loads of orange peppers and cucumber, and sweet potato is as good as normal.

Garlic butter, black pepper, Stilton cheese. Incredible.

Houmous....sometimes with baked beans. Sounds random but it's lush!

I'd already planned to have jacket potato and earlier in the day removed some home made bacon and liver pate from the fridge to use as topping. Have also been eyeing up online the containers of five different sandwich fillers from Iceland for future use. I loved the coronation chicken, the cheese and onion, and the egg mayo as toppings for jackets but haven't tried the others yet. Each container costs £1 and would do at least two meals. It must be the season for thinking of autumn jackets

Veggie here so here goes:

Grated cheese and brocolli (yum)
Left over spag bol/chilli
Garlic and herb Philly or roulade
Cottage cheese with chives

Or

Scoop out mash with cheese and creme fresh pop back in skins add cheese on top and grill until crispy.

Just beans and cheese for me!

Loads of oozy butter, and chopped crisp streaky bacon is my all-time fav and can tempt me to eat even if I'm not well
