What can I make for (a veggie) dinner with potatoes that isn't cottage pie?

We're on a super tight budget. I have a huge bag of spuds.

My potatoey repertoire includes:

Lentil cottage pie
Veggie burgers with wedges
Mashed potato
Roast potatoes (with a nut cutlet and veg)
Jacket spuds
Leek and potato soup

But we've had all of that in the last 10 days already. So I'm after inspiration!

I'm contemplating trying to rostis with spinach and poached egg, but I think the dcs will be a bit 'meh' about it!

I have a nicely stocked store cupboard for the time being.....

Lots of veg curries have quite a lot of potato in them.
Dauphinoise potatoes and serve with stuffed mushroom/ people or even just a veg burger

Lapin I love a veggie curry but really dislike potatoes in curry!

Boulanger potatoes as an alternative to dauphinois
Slices of potato and onion in a dish, covered in stock and put in the oven for 45 mins

Do they like cheese? You could try hassleback potatoes and grate Parmesan over them (they're the ones with lots of slits in almost all the way through)
I think your idea of rostis and poached eggs sounds fantastic though!

We love the Prashad potato and tamarind curry. It is unbelievably delicious. I usually use baby potatoes not big ones like in the recipe, but had it with normal potatoes last night and it was fab. Do let it sit for a bit before you eat it, it does get even better. If you don't have Tamarind, we used the juice of a lime once, and it was possibly even better. The DCs had it with fish on the side last night, and said it worked well.

Curry? I love just chopped potato, almost cooked through, then add to chopped fried onions and spices plus a tin of coconut milk, ground almond and honey.

Ooh how about tatties and (veggie) mince? I make it with everything shoved in a pan together rather than with mash.

Moussaka - but use thinly sliced potatoes instead of (or with) aubergine - delicious.

You could do mashed potato in individual ovenproof dish, make a hollow in the middle and crack an egg in. Then bake in oven til the egg is cooked. You can add cheese to the mash or grate a little cheese over the top if you prefer. I loved this as a kidSmile
