What can I make for (a veggie) dinner with potatoes that isn't cottage pie?

We're on a super tight budget. I have a huge bag of spuds.

My potatoey repertoire includes:

Lentil cottage pie
Veggie burgers with wedges
Mashed potato
Roast potatoes (with a nut cutlet and veg)
Jacket spuds
Leek and potato soup

But we've had all of that in the last 10 days already. So I'm after inspiration!

I'm contemplating trying to rostis with spinach and poached egg, but I think the dcs will be a bit 'meh' about it!

I have a nicely stocked store cupboard for the time being.....

I do a mean spinach fratarta. Just boil new pots with skin on,. Meanwhile fry red onion, garlic. Beat 4 eggs (this serves 2) add some grated cheese, fried onions and garlic, spinach and boiled pots to egg mixture. Heat olive oil in pan pour in mixture, cover with sliced toms and put some grated cheese on top, cook 12 mins (until underside cooked) then put under heated girl for 5 mins! Delish served with salad and garlic bread.

not being a veggie so don't know if it would work but could you do a veggie equivalent to corned beef hash with an egg kind of poached/fried in a hole in the hash (we have this and it is sublime as you have crispy potato and soft eggy ness 😀) you probably could do something similar with halloumi? or veggie mince with a bit of spice and lots of onions?

Potato cakes, potato bread, potato gnocchi dumplings.

Baked potato soup - basically much much garlic, plus the insides of the potatoes, onions and stock. Take the potato peelings (peel them thick deliberately), and toast them, use them as croutons on top. Really yummy.

There's a potato fudge recipe somewhere.

Only read first page but how about a veggie moussaka or lasagne with potato instead of pasta.
Or get leftover mash and make potato cakes. I like mine with cumin and a bit of fennel in... mmmmm. Or with cheese. Sit it on a bed of spinach and have a poached or fried egg oozing on too! Yum! I fuckinh love potatoes.

Homemade chips, egg & beans!
Homemade pakoras - made from potatoes thinly sliced, onions, dried chilli flakes, dried and fresh coriander and fresh green chillies
Mix into a batter with gram flour and water and fry - eat in bread cakes with cheese slices and ketchup!! You could even have chips with them! (Or oven baked wedges if you feel it's a bit overboard on the frying!)

Have you tried chilli con carne with rice?
Chilli can cost up to 30p a tin of tomatoes, 30p a tin of kidney beans depending on where you live.

Potatoes can be made into wedges to accompany. Wash and slice whole potatoes, toss in a bowl with spoonful of oil and add a handful of herbs such as oregano/mixed herbs etc to it and stir.
Put into oven for an hour at approx. gas mark 6 for one hour. Just keep checking frequently

What about breakfast?

You could make hashbrowns and eggs. We always made fried potatoes in a pan rather than hashbrowns in my family which are yummy. You could serve with veggie sausages/bacon etc.

Have a look at cookieandkate.com - don't know how many recipes include potatoes but I'm not even veggie and make something from this website at least once a week (my DH finds the brussel sprout obsession weird but I love it).

My MIL makes a great cheese and onion pie that seems to be mainly potatoes...you can't really go wrong with potatoes, cheese, onion and pastry.

Fishcakes made mashed potato, spinach, fish and peas.
