What can I make for (a veggie) dinner with potatoes that isn't cottage pie?

We're on a super tight budget. I have a huge bag of spuds.

My potatoey repertoire includes:

Lentil cottage pie
Veggie burgers with wedges
Mashed potato
Roast potatoes (with a nut cutlet and veg)
Jacket spuds
Leek and potato soup

But we've had all of that in the last 10 days already. So I'm after inspiration!

I'm contemplating trying to rostis with spinach and poached egg, but I think the dcs will be a bit 'meh' about it!

I have a nicely stocked store cupboard for the time being.....

Potato, black bean and spinach hash - just fry everything with some onion, add hot sauce to taste and serve with a fried egg on top.

What about potato skins? You take baked potatoes scoop out some of the potato flesh and then cut into wedge shapes. Slather some butter and garlic, salt and pepper, we also do a little bit of brown sugar. Then put them in a hot oven until slightly brown. You can then top them with cheese and put them back into the oven to melt the cheese. You can skip the butter and browning bit, but it just adds so much flavour.

Mash potatoes. Saute leeks and onions. Mix together with a load of grated cheese. Shove into a buttered dish. Top with more cheese. Bake. Eat with peas and HP Sauce for the best comfort food in the world. Or with salad instead, if you want to pretend to be healthy-ish.

Dauphinoisse with veggie sausages and some vege.

I make a variation of cottage pie by making mash as the 'crust' and mixing chopped tomatoes instead of gravy with the lentils. The pie is then topped with dollops of cheesy mashed potatoes and baked until the top is browned.

Curries. Curries with potatoes are lovely. Use regular potatoes, sweet potatoes and other root veg or squash/pumpkin all mixed together.
